Special-used wheat flour(SUWF) is paid more attention only in recent time, and now it is developing in a more rapid speed. SUWF is the development trend of wheat flour industry because of special quality characteristics and high product value. In the development of SUWF, more attention is given to strong and medium flour such as bread flour, steamed bread flour and dumpling flour, but soft flour such as biscuit and cake flour are not given more attention, especial the technology and the process of soft flour using domestic wheat. Xinyang district of Henan province produces high quality soft wheat, which is the suitable material to produce biscuit flour and cake flour. On the basis of a new project "the processing system of soft wheat SUWF with capacity 200tons/ day" (Henan Jinyu Wheat flour co.,Ltd), the technology design and equipment choosing were studied and analysized, and a set of technology and method were developed to process soft wheat flourThree requirements are needed to produce SUWF, that is suitable wheat material, advanced process technology and equipment, and flour blending system. Wheat flour quality is determined by wheat quality, wheat flour milling precision is determined by process technology and equipment, and the diversification of wheat flour varieties are determined by blending system.Milling flow is the heart of wheat process. According to the milling characteristics of soft wheat, the following measures are adopted in the design of milling flow. The ratio of breaking system is increased, the technical characteristics of breaking roller is changed, the sifting route of flour sieve and grading sieveare lengthened, the ratio of reduction system is decreased, and the purifying system is simplified.Material conveying system, and aeration and dedusting system are also the main parts of wheat processing. According to the analysis to different conveying methods, it was determined that the conveying of raw material and finished products applied mechanical conveying, the milling material used negative pneumatic conveying, and the conveying of blending system used positive pneumatic conveying. Aeration and dedusting system applied combined dedusting design to ensure the environment cleaning.In the end, the whole design work was done to the wheat process system.
