1. Cuminum cyminum L ,which is special resource in Xinjiang province ,is used widely as barbecue season .This paper systemically investigated the supercritical fluid CO2 extraction and micro-encapsulation technology of cumin oil. New way for exploiture cumimum was provided.2. Summarized the simple factor experiment and orthogonal experiment, The results indicated that the extraction rate of cumin oil was affected ordinal by extraction pressure , grind degree of material ,flow of liquid CO2 and extraction temperature. Extraction pressure is the most important factor.3. The optimal extraction condition showed that the extraction pressure was at 35 MPa, grind degree of material was at 40 hole, flow of liquid CO2 was at 25kg/h, extraction temperature was at 40℃. separate pressure was at 6 MPa, separate temperature was at 50℃.4. Through the comparing test , the results showed that extraction rate of cumin oil of SCFE was higher than extraction rate of steam distillation, the quality of cumin oil of SCFE was better than the quality of cumin oil of organic solvent.5. The optimal micro-encapsulation condition showed that the wall-material was arabic gum ,malt dextrin and soy protein .their proportion was 1: 2: 2. The suitable proportion of core-material and wall-material was 1: 3. The Optimum proportion of dry material was 25%. Churning speed was 10000r/min for 5 min ,and 3 times . Inlet temperature of spray drying was 180℃, outlet temperature of spray drying was 115 ℃.6. The characteristic of micro-encapsulation cumin oil was high anti-oxidation ,convenience and security.
