In the sugar industry, sugar boiling is not only the last workshop section but also the key section. Then the quality of crystallization is decided by the supersaturation of magma, which must be retained in right fields. However, many enterprises in China rely on the experienced and skilled worker to operate and control the process of sugar boiling. Hence, this paper present the theory and method about computer control used for the process of sugar boiling in the workshop. In this way, the efficiency and benefit would be improved with the higher quality of product.It's very difficult to precisely build a mathematic model that relates the flow of juice and water with the supersaturation because of the nonlinear diversity when the system was interfered. Based on the theory, experience and elements of crystallization, this paper analyzes how theelements influence the quality of boiling and measuring conductivity to get the movement of supersaturation. Then it combines the traditional and advanced intelligent control technique, applies the fuzzy control and PID theory to control this physical and chemic process. Furthermore, it recommends a design of hardware and software for the whole control process. The fuzzy control of supersaturation and its optimization is emphasized for it plays the key role in the whole process. At length, the fuzzy controller and self-adaptive fuzzy-PID controller are designed, simulated and compared on the MATLAB6.5 &Simulink 4.0. From the theory, it is feasible to control the boiling process by employing the fuzzy control technology.
