Analysis of the dextran contents in sugars is an important analysis project, which can reflect the quality of the raw material, products and the process. Analyzing the dextran contents in sugars needs skillful operators, or the result would not be good. Moreover, the analysis process needs much time.In this paper, near infrared spectroscopy is used as a new way to solve this problem. The studies included analyzing the feasibility in analysis of the dextran contents in the goods in process; and building the mathematical models.The main studies included as follow:1. Analyzing the feasibility in analysis of the dextran contents in the goods in process by near infrared spectroscopy;2. Comparing the methods used to analyze the reducing sugar contents in the goods in process;3. Setting up mathematical model for near infrared spectroscopy;4. Analyzing the changes of dextran contents in clarification process in the mill.
