Production of the secondary metabolites γ-Aminobutyric acid(GABA) by Monascus is a hypotensive agent. In this thesis, the medium and culture condition of fermentation production GABA were studied.Monascus pilosus GM100, the strain with highest amount of GABA, was identified from several strains. The biology characteristic of Monascus pilosus GM100 was studied. The optimal temperature for spore grow and mycelial grow is 30℃ and 32℃, respectively. The optimal pH is 4.0-5.0, and it endure 15%(V/V) ethanol in liquid medium. The GABA concentrations were determined by HPLC-ELSD.The optimal condition of liquid fermentation, solid-state fermentation and static fermentation were studied. The optimal condition of liquid fermentation is: lactose 5%, starch 2%, yeast power 3%, soybean powder 2%, NaNO3 0.5%, KH2PO4 0.15%, MgSO4 ? 7H2O 0.1 %, pH 4.0, 8% inoculum, seed age 36h, 32℃(3d), 180rpm, 30℃(12d), 180rpm.
