Because of the behindhand of automatic measurement technology for food, the laggard development of mechanism and the rapid process of agriculture's modernization recently, the technology of nondestructive inspection and classification of farm products is becoming more and more important and imperative.The paper is based on the first stage of research on the item and the physics of dielectric, and takes advantage of the theory of electromagnetic field to discuss the dielectric property of farm products and the theory of polarization. FEM analysis is applied to deal with the electric field distribution of electric dipole and made simulation for the first time. It provides a theoretical basis for the nondestructive inspection mechanism of fruit. At the same time, on the basis of properties of farm products, the equivalent electricity model for testing fruit dielectric property is established, and the influence of the dielectric properties of fruit in the alternating current is also analyzed.The whole nondestructive inspection system is introduced, such as the principle of experiment, assaying and compute, and experimental electrode.the relationship of apple's dielectric property with its inner quality is discussed and studied.
