The traditional sterilization methods have a lot of shortage while the sterilization with high-pressure gas has many advantages such as innocuity, high efficiency, user-friendly, low cost and so on. This method won't change the intrinsic flavor when used in food industry. It also is environmental friendly when used to get rid of the sullage. A test-bed used for sterilization by high-pressure gas experimental study based upon the reference of experimental study abroad was constructed. Moreover, the experimental study of sterilization by high-pressure CO2 carried on firstly in China after solving the problem of design, installation and experimentation. The material for experiment includes beer yeast, high-pressure CO2 used mostly while N2 and air used for comparison. The experimentation includes basically four aspects: (1) Bactericidal effect of three kinds of gas with different pressure. (2) Bactericidal effect of three kinds of gas with different time of operation. (3) Bactericidal effect of three kinds of gas with different concentration of yeast liquor. (4) Bactericidal effect of three kinds of gas with different aperture of gas distributing pipe. The test results show that: (1) It is impossible to use high-pressure gas for sterilization. (2) The bactericidal effect of three kinds of gas has almost no differ in the same situation. The bactericidal effect of high-pressure CO2 is the best and high-pressure N2 next to it. The inactive rate of high-pressure air is somewhat lower than rate of high-pressure N2. (3) The dissolved CO2's acidity can also make yeast which is not break up dead and the inactive effect will be enhanced when time raising, but, it has no influence to the whole inactive process. The feasibility and practicality of sterilization by high-pressure CO2 were validated after the experimental study. The method of enlarging the rate of sterilization, which is helpful to the commercial process, was gotten.
