The Study To The Ecological Distribution And Productivity Of Microbein Shanxi-super-vinegar Daqu

This test applyed microbiological ways to isolate and differentiate the microbe involving in the brewage of vinegar,after sampling from diffrent places of Special Daqu of Shanxi-super vinegar,and to analyse the distribution traits and some main production performance.The results as follows: Daqu's core exists more Mucor, less Monascus, and more Candida,Hansenula;Daqu's edge and corner exist more Mucor and Absidia, Candida﹑Endomycopsis﹑Hansenula﹑Vinegar bacteria are also more. Daqu's surface exists more Mucor,Absidia,Candida, seperately 2232×105g/Daqu,2098×105g/ Daqu,1325×105g/ Daqu,and acetic acid bacteria is the most in the entire Daqu.The study also showed that mold pollution is up ,Lactobcillaceae,Bacillus are down,along with nearing Daqu's surface. Acid production of high-performance acitic acid bacteria from Daqu′s core is 1.181～3.942 g/100mL,and Daqu′s surface 1.554～4.125 g/100mL,Daqu′s edge and corner 2.004～4.367g/100mL;Acitic acid bacteria exists superiority not only in quantity ,but also in perfermance. The strains producting acid protease is mainly Mucor,Aspergillus and some Rhizopus,Absidia,Monascus;The strains of Mucor (575.62 u/g dryDaqu)and Aspergillus (562.83u/g dryDaqu)with highest performance exist in the Daqu′s surface;In Daqu′s surface and Daqu ′s edge and corner there is more Mucor ,Aspergillus and less Rhizopus;Daqu′s core,more Rhizopus,Less Aspergillus. In Daqu′s core and Daqu′s edge and corner there is more lactic acitic with high performance;The strains with highest performance exist in Daqu′s core and Daqu′s edge and corner,seperatly 1.48% and 1.50%; Lactic acitic with high performance from Daqu′s core and Daqu′s edge and corner exists superiority not only in quantity ,but also in perfermance. The mold strains producting amylase mainly exist in Daqu′s surface and Daqu′s edge and corner,such as Aspergillus,Mucor,Rhizopus;In different places of Daqu Absidia with high performance seemly exist the same quantity;A little of Monascus fron Daqu′s core has higher performance. The yeast strains with hign performance in producting esterase is mainly Candida,...
