Red globe grape, produce American California at first, belong to Eurasianspecies. Because its fruit grain is large, the color and luster is gorgeous, pulp isrigid and friable, the dissolubility solid content is high, the yield is high, the fruitis not rip, the fruit brush embed interior of the fruitery is thick and long, don't takeoff the grain, bear the hoarding, the shelf life expect is long, the red globe grape isdeeply welcome by people. But the anti-disease and anti-medicine ability of redglobe grape are bad, how to prolong the purveying time and keep its good quality,have been the very problem which the planter and researcher pay attention to. Atthe same time, the non-pulluted food has been recognized by the people anddeveloping the green storage of the non–pollu ted grape has been one of the maindirections that the grape protects the fresh technique research.The propolis is a kind of inartifical material, not only implying varioushelpful biologic active composition to human body, but also taking on greatefficiently and widely unbactrium function. Propolis will become the very thinfilm of a layer in the food surface by daubing which can insulate the oxygen,separate the microorganism and reduce the function of the humidity evaporation,lower the breath strength and metabolisms, reduce the depletion of the nutrient,thus prolong the time of protecting fresh, keep its corruption from change incharacter.The HACCP ( the Hazard Analysis and Critical Control Point) is amanagement system, which has greatly prevented function, used to protectingfood, preventing from the biologic, chemistry, physics bane.This text study the fresh technique of the red globe grape without the harmfuleffects, adopting three kinds of methods coalecented: low temperature, inartificalpreservative and system of HACCP.The main work and conclusion are as follows:1) Follow general principle which is to choose the factor and levels as far aspossible little, has the prominent influence to the red globe grape to protect thefresh, make sure the propolis density and the temperature of storage and degree ofhumidity three experiment factor, carrying on three factors, three levelsesorthogonal array.The result enunciated that the biggest influence to protect thefresh of the red globe grape is the propolis density A, showing the prominent level0.01;the next factor is temperature B, showing the prominent level 0.05;then isthe degree of humidity C, showing the unobviously influence. The superiorcombination is an A2B1C2, namely 15% propolis density, store in 0.5 ℃, degree ofhumidity 85%~95%. The method under that condition is the best one to protectthe fresh.2) Falled grain rate, putrefied rate and lost gravity rate present the up-trendduring the period of hoarding, the dissolubility solid content presents thedescending trend. The descending range is obvious low to the contrast set. Theactivity of SOD enzyme;the content of MDA, the POD enzyme activity, thebreath strength appear descending after a most high peak, which means the abilityof clearing live oxygen inside the body descending and the oxygenation with thefilm fat function strengthening.3) The length of the storing period and the quality of the grape are directlyinfluenced by the bee propolis density.
