D-Trehalose is a unique sugar capable of protecting biomolecules against environmental stress in nature, Trehalose can restrain the factors causing food metamorphosing as follows: starch aging, denaturalization of protein, oxidation of ester, polution of microorganism and so on. Trehalose can restrain these factors effectively. As a safe food additive, trehalose has been confirmed by FDA and EFSA. Besides, trehalose is a good conserver of biomaterial and an ideal factor for skin moisting. In this paper hydrolyzed starch produced trehalose through cooperation between MTSase and MTHase. The experimentation primarily optimized the process of trehalose production from Microccus roseus based on the previous achievements of our research group.We gained a higher producing strain by UV and complex mutation. And the transformation rate of trehalose reach 55% above, nearly 20%...
