The application of pesticides has provided benefits in increasing crop production.Thereby these insecticides may remain in vegetables and fruits that threaten human health. Therefore a rapid convenient accurate and sensitive method is required to determine the vegetables.The influence of different elution solvents and SPE columns to CVs of pesticide were discussed in this article. In addition, a rapid analytical method on determination of pesticide multi-residues in fruits and vegetables is presented too. In this method, consulting the method of CDFA (California Department of Food and Agriculture of USA),I have studied the analytical technique of two type of pesticide (organic chlorine and carbamate) in fruits and vegetables that have great value in China, with HPLC.It is impossible to establish one method to applying for all of pesticides and samples.So different methods are introduced to analysis different categories of pesticides, according to different physico-chemical properties.The study includes three parts.In chapter first a review concerning sample pre-treatment technologies and the determination of pesticide residues in fruit and vegetables is presented. Sample pre-treatment technologies includes supercritical fluid extraction (SFE), solid phase extraction (SPE), immunoassay analysis chromatography (IAC) and so on. SPE and chromatography method is usually used.In chapter second three organochlorin pesticides in vegetable and fruit have been analyzed using SPE technology and high performance liquid chromatography with UV. The analytical procedure involved in extraction with acetonitrile, purificationusing a Florisil SPE(solid phase extraction)column (5m1,1000mg) and n-hexane-acetone(7:3,v/v). dichloromethane(l:l,v/v).
