Drying is one of the most important techniques in industry, which influences the character, form and quality of products and the energy consumption during the process. With the development of technology and the interaction between subject and technique, drying technology changes quickly. One of the most popular research areas is using high electrostatic field because the electrostatic field can promote the evaporating and drying procedure. But there are some other electromagnetic technologies have not got systemic research such as the drying procedure, the effective radius of needle-plate-electrode field, and the model of EHD (electrohydrodynamic) drying. For the better application of these technologies, the further research should focus on the mechanism of EHD drying and the effective radius of needle-plate-electrode field.Based on theories of Physics, Electromagnetic, Food physics, Chemical engineering, Electrosatics and Measurement technology, there are two parts addressed in the thesis: one is the research of effective radius of needle-plate-electrode field. The other is the research of EHD drying model. The main results are as bellows: 1. A set of EHD drying setup was developed, which includes a needle-plate-electrode system and high electric field. Potato slabs are dried using the setup. The results show that high electric field can promote the drying of potato slices. The color and shape of the potato slices under high electric field are kept better than that controlled.2. The effective radius of needle electrode in the high electric field established with a needle and a aluminum plate is analyzed. The potato slabs were arranged in the different concentric circles on the plate electrode except the slab laid on the center of the plate electrode.3. The model of EHD drying was researched.
