Grasshopper has higher economic value, because there are many functional ingredients in it, such as abundant protein, essential amino acid, vitamin, microelements, unsaturated fatty acid et. This paper attemped to make a research on extraction of grasshopper protein, enzymed protein the discovery of antioxidative peptide.The results showed that the protein content of grasshopper was high, the compositon of amino acid was desirable, and had all kinds of essential amino acids. So grasshopper was a high quality protein resource.The protein of Oxya chinensis (Thunberg) was divided into water dissolved protein (48.4%), acid dissolved protein (2.8%), alkaline dissolved protein (1.2%) and mellow dissolved protein (0.3%). The content of water dissolved protein was high, so grasshopper protein was easy to digest and absorb.The results showed that the optimum extraction conditions of Oxya chinensis (Thunberg)water dissolved protein were as follows: the ratio of grasshopper/solvent (g/mL) was 1/15, pH of solution was 7.4, the NaCl concentration in the extractive reagent was 1.0% and the extraction time was 4 hoursCompareing with antiodative of zymolytes of different enzyme to Oxya chinensis (Thunberg) protein's hydrolysis, Alcalase was established as the first enzymeResearched on the enzymatic condition in the process of Oxya chinensis (Thunberg) protein's hydrolysis with Alcalase. Based on the research, we have gotten the best chnical parameters: substrate concentration 3.0%, pH 8.0, temperature 55℃, hydrolytic time 4h, enzyme-added contents(V/V,%) 10%. On this condition, the hydrolysats have obviously antioxidation activity and the inhibition ratio of pyrogallol autooxidation has over 40%.In the system of non-oil, zymolytes can clear superoxide negative ion(O2-) but the effect of clear was not far from VC;when clear hydroxyl free radical( OH) ,the effect was equivalence;when clear l,l-diphenyl-2-picrylh-yrazyl free radical(DPPH ) and the determination of power, the zymolyte was stronger than Vc.In oil system, zymolytes show stonger inhibition to the autooxidation of grease andlinolic acid and delay the induction period.Zymolytes was separated four component by Sephadex G-25 and the component III have stonger antioxidative.Strong-acid ion-exchange resin separate component III into three ingredientjl ingredient show stronger activity than I and II to the inhibition ratio of pyrogallol autooxidation, so ingredient III will be separated by anion exchange resin.Strong basidity anion exchange resin separate II component into three component ,B component inhibite pyrogallol autooxidation was strongest.The plate have several dots by TLC determination . it suggested that the peptide was still mixture which need be separated.Zymolytes could increase the activities of blood superoxide dismutas(SOD), glutathione peroxidase(GSH-PX), catalase (CAT) of mice, liver and brain organization, decreased the content of the malondialdehyde(MDA)and the activity of monoamine oxidase(MAO). The Stigma maydis flavoniods extracts could distinctly delay the mice's aging, Zymolytes had a good anti-aging action.Zymolytes could distinctly prolong the loaded- swimming time of mice, lower the content of blood urea nitrogen(BUN) of post-exercise mice, decrease the consumption of liver glycogen and increase the activity of lactic dehydrogenase(LDH). Zymolytes have functions on increasing the adaptability to exercise tolerance, resisting the produce of fatigue and accelerating the dispelling of fatigue.
