A new and security preserving agent was formulated with chitosan as main ingredient, and added others different assistant ingredient. Kuerle fragrant pear was studied using Coating preservation at room temperature in this experiment. Through the study on effects and physiology of Kuerle fragrant pear, we wish we could get the mechanism of Coating preservation in fragrant pear storage and the viable method of Kuerle fragrant pear storage at room temperature. The results are showed as follows:1. Through the orthogonal experiment, the best coating formation was got, which was 2.0% chitosan, 1.5% acetic acid, 3% 1,2-propanediol, 0.005% TW20. The experiments show that this chitosan coating is effective in keeping Kuerle fragrant pear fresh, the healthy fruit was 95% for 56 days storage at room temperature.2. The chitosan coating could significantly reduce water loss rate, rot rate, could effective inhibit levels of chlorophyll reducing, have better effect of retaining green color.3. The chitosan coating could significantly increase hardness of Kuerle fragrant pear, inhibit contents of VC and total acid, maintain good quality of pear, prolong Kuerle fragrant peats storage time. And chitosan coating could inhibit contents of reducing sugar decreasing to some extent.4. Chitosan coating significantly inhibited respiration of kuerle fragrant pear. The experiments indicated that respiration of contrast pear reach the highest (27.22mgCO2kg-1h-1) level at the fourteenth day of storage, while fragrant pear which was treated was at the twentith day of storage, the highest of respiration postponed 7 days.5.The result suggested that Chitosan coating maintain integrality of membrane, suited could lighten damage of membrane, prolong storage days of fragrant pear.6. Chitosan coating could inhibit CAT activity, SOD activity decreasing, prevent PPO activity increasing. Different coating preservation has different effects on CAT enzyme activity, chitosan coating significantly prevention and cure browning of fragrant pear.
