Pork freshness is an important guideline of porky quality. In our country, the productive technique, means of vendition and management, and the detective method are behindhand, the freshness of pork hasn't achieved international criterion at present. Putrefactive pork has less nutritious value and bad dainty ,and may bring poisonous substance, which causes harm to trencherman, so pork freshness looks very important and arises people's attention. Presently, the detective methods of pork freshness are conventional physical and chemical method, conductance,colorphotograpy,near-infrared-spectroscopy,ultrasonics, etc. Conventional physical and chemical method is slow, equipment is complicated, procedure is troublesome and the data error is big. And the methods nowadays, apparatus is costly and schlep discommodiously, the analytic cost is so high, and they need destroy sample, too. Aiming at porky odor characteristic, the suit of artificial intelligent olfactory system is excogitated and empoldered, which fits for pork freshness detection and evaluation. It can detect pork freshness quickly, truly and intelligently and forecast pork freshness in the storing course, improve pork quality accordingly. The main researching work and the conclusions are as following:1. By the researching on the characteristic of gas sensor, and the analyzing of afforded condition of sensor's market in our country, resistance semiconductor sensors are choosed to compose sensor array. Then based on the characteristic of the porky odor, TGS822,TGS825,TGS826,TGS832,TGS2611 are selected as the sensitive element of pork freshness artificial olfactory system.The sensor array can reflect the porky odor sensitively.2.
