As a representative of"nondestructive test", ultrasonic analysis technique is rapid, nondestructive, low-costing and efficient. It's not only suit for laboratory analysis, but also in field fast measurement and real-time online analysis. This technique can be widely applied in chemistry, agriculture, medicine and clinic, food analyzing and so on. With the more and more important role in daily life milk plays, fast quality detection of milk become an crucial problem. Routine chemical methods for quality detection are slow and need professional workers, which can't satisfy the requirement of modern quality detection. Therefore, it's urgent to develop a simple and fast method on milk components analysis. In this paper, milk components analysis by ultrasonic is elaborated. The author made an in-depth study of application in milk components analysis and expounded the structure, hardware, software and performance of instrument designed for milk component analysis in detail.The main research contents of this dissertation include:1. According to research sufficiently on structure, components of milk and property of ultrasonic transmitting through medium, effects, which fat, solid-not-fat (SNF), and protein have on velocity and attenuation, are analyzed. Then ultrasonic analysis technique proves to be suit for analyzing components of milk.2. Based on experiments, data analysis and parameters of velocity and attenuation filtering, nonlinear regression models of fat, SNF, density, protein and lactose are established using PLS. The correlations of these models are 0.9932, 0.9914, 0.9937, 0.9924, 0.9930 and the RMSEP of these models are 0.089 g/100ml,0.097 g/100ml,0.102 g/100ml,0.114 g/100ml,0.627 kg/m3, respectively.3. System of measuring velocity and attenuation transmitting through milk has been designed. Hardware and software of this system have been already debugged. This system has been used for milk components analysis experiments.4. Program of instrument-user interface based on VB 6.0 and program of instrument calibration based on PC.5. Performances of the instrument were evaluated fully. It can meet the requirements of milk components analysis.
