Along with the unceasing raising of people's living standard, the demand for fruits and vegetables which have rich nutrition composition increases continuously. The pure natural organic foods, receive the domestic and foreign consumers' favour in particular. The physalis pubescens does not have the massive planters as the organic foods, the fresh-keeping research to it is very few. And the people also pay more attention to fresh-keeping in the process in the fruits and vegetables the nutrition content maintenance. Therefore, in this paper, a new storage-fresh way for physalis pubescens was found.In this paper, the domestic and foreign correlation research to the fruits and vegetables were summaried, contrasting its good and bad aspects, the implementation possibility and the effect of maintaining freshness. At last the method of ice-temperature fresh-keeping of physalis pubescens was determined. But the essential parameter of ice-temperature fresh-keeping is to determine freezing point scope of physalis pubescens. In this experiment, ice-temperature fresh-keeping of physalis pubescens was basically studied. The freezing-point of physalis pubescens was tested and also was analyzed. The physalis pubescens'ice temperate zone was expanded though the freezing point conditioners. The suitable condition of ice-temperature fresh-keeping was measured, and the physiological change of physalis pubescens has conducted the foundational contrast research.In this experiment, ice-temperature fresh-keeping of physalis pubescens was basically studied. freezing point of physalis pubescens was tested and the freezing point also was analyzed. The physalis pubescens'ice temperate zone was expanded though the freezing point conditioners. The conclusions are as followed:1.The influence factors determination for freezing point of physalis pubescens. Firstly, the single factor experiments were carried on for determining the influence factors of physalis pubescens'freezing point. Secondly, the regression equations were established. Thus a data of physalis pubescens'freezing point was obtained accurately and conveniently. The result show:①The freezing point of physalis pubescens is different along with the maturity different maturity. The physalis pubescens of high maturity has a low freezing point temperature. The regression equation of 70%~80% mature is: Y=4.0351-0.546667X, and the regression equation of 90% mature is: Y=3.6982-0.546667X.②The freezing point of physalis pubescens reduces with the reduction of water content, and the result conforms to a linear return. The regression equation between the freezing point of physalis pubescens and the relative water content is: Y= -10.0389+0.085707X.③The freezing point of physalis pubescens reduces with the increasing of the soluble solid content, and the result also conforms to a linear return. The regression equation between the freezing point of physalis pubescens and the relative soluble solid content is:Y= -0.041154-0.243269X. It's a linear return between the water content of physalis pubescens and the relative soluble solid content. The regression equation is:Y=116.2108-2.7962X.④The difference is studied between the freezing point of physalis pubescens juice and the organization freezing point. The death organization freezing point of physalis pubescens is obtained though the juice. It's lower about 0.2℃than the organization measuring method.2.The freezing point conditioner determination. In order to make ice-temperature fresh-keeping easier to operate, this paper plans to determine the freezing point conditioner which can expand the freezing point scope, and expands ice temperate zone. The conclusion through the single factor experimentis drawed: The reversion of Vc soaking liquid is the best of other soaking liquids, and it can increase Vc content of physalis pubescens. But it was smaller influence to the freezing point. It is decrease 0.5℃comparing with no the freezing point conditioner. And the influence of CaCl2 soaking is medium for physalis pubescens freezing point and the reversion. It is decrease 0.7℃comparing with no the freezing point conditioner. The CaCl2 soaking can increase calcium content of physalis pubescens. The sorbitol soaksing is biggest influence to physalis pubescens freezing point. It is to drop 1.1℃comparing with no the freezing point conditioner. But the reversion is ordinary. The sucrose soaking has not nearly affected to physalis pubescens freezing point.3.The most superior allocated proportion of freezing point conditioner. For getting the higher nutrition ingredient and a better reversion while the wider ice temperate zone, according to the above this chapter has carried on the combination design of orthogonal rotating. Drawing the conclusion: when the density of Vc soaksing is 1.68%, the density of CaCl2 soaking is 1.68%, and the density of the sorbitol soaking is 1.7%, the freezing point conditioner can make the physalis pubescens freezing point -4.2℃. There was the certain disparity with the theory, but the ice temperature scope is the wider and the recovered is good.4.The contrast experiment of ice-temperature fresh-keeping. According to the above result, ice-temperature fresh-keeping grouping experiment of physalis pubescens was carried on. Though the changes of the dehydration rate, the Vc content, the soluble solid shape, the hardness, the breath speed, the conclusion is drawed: the datas is advantageous to warm to ice-temperature fresh-keeping of physalis pubescens. The physalis pubescens can maintain freshness above 50d by this way. The ice-temperature preservation is a preferable mothod.The innovation of this thesis is:1 ) The influence factors regression model of physalis pubescens freezing-point was found.2)The most superior allocated proportion of freezing point conditioner was determined.3)The first attempt to ice-temperature fresh-keeping of physalis pubescens.
