The thesis is part of the item"Investigation of intelligent Structure of Protein-Based Edible Biopolymers"(serial numer:20060717), which is the science and technology developing program item of JiLin Provincial Science & Technology Departmen. The thesis'main task is to study carrot fiber and basic property of papermaking.Carrot paper meets the trend of food packaging'development, and it is a perfect inner wrapper of food. The paper has lots of strongpoints. It can be eat together with food, without polluting to food and environment. It can be used as carriers of food flavour, pigment, nutrition enhancer, antioxidant and antimicrobe agent. It can be used as monomer packing of food. It has obvious waterproof property and can stave the transference and diffusion of water and oil and other ingredient in food. It has optional air permeation and anti-osmosis and can stop flavours from volatilizing. It has good physical and mechanical properties and can protect food very well, and without damnification. It can improve the quality of product and prolong shelf life of food. Using carrot paper to replace plastic film as inner packing can be eat together with food, and need not to pull apart pack. It is convenient and sanitary, and can settle the pollution of castoff effectively and meet kind of aspects'demand.At present, carrot paper can be eat only, and not be used wrapper because of its poor properties. Otherwise, thete are neither nation standard nor industry standard to use evalution target and testing means of vegetable wrapper.The thesis took carrot as main material and analyzed constitutes and characteristic of its fiber. According to constitutes and characteristic, the thesis chose the feasible additive and technology condition. The thesis also optimized the optimal technology stuff ratio and technology parameters by extreme vertices mixture design and quadric orthogonal rotary unitized design.The main contents and conclusions via the thesis's studying are as follows:1) The author put forward a set of engineering properties evaluation system of vegetable wrapper, according to the appropriate adjustment and the generalization to the contents of the evaluation system of plastic and paper wrapper, which included several aspects such as size, optics property, thermal property, barrier property, mechanical property, chemical property, etc and sanitary targets.2) The author measured the contents of total dietary fiber and every ingredient in carrot. The results were: the content of total dietary fiber was about 8.42%, that of cellulose was about 2.88%. That of hemicellulose was about 1.52%. And that oflignose was about 3.83%. The author also observed the conformations of carrot and its fiber, and found the carrot fiber after beating was better fit for paper making.3) The author measured the length and width of carrot fiber. The longest fiber was 2.332mm, the shortest fiber was 0.027mm, the average length was 0.588mm, the biggest width was 0.0294mm, the smallest width was 0.0049mm, the average width was 0.012mm, the ratio between length and width was 50.28. The thesis drew the picture of the length and width distributing frequency of carrot fiber. The conclusions can offer data for adding appropriate additive and study of related in future.4) The thesis analyzed the factors'effect on carrot paper'kinds of quality and properties by single factor experiment. The factors included CMC, starch, glutin, glycerin, drying temperature, drying time and volume of carrot pulp. The appropriate adding range of thickeners were: CMC was 0.1%~0.5%, starch was 1%~5%, glutin was 0.1%~0.4%; The appropriate adding range of plasticizer was 1%~4%; The fitting range of drying temperature was 50~70℃; That of drying time was 5~7h; The best ratio of water and carrot pulp was 1; The fitting range of volume of carrot pulp was 100~140ml.5) The thesis gained optimal technology stuff ratio at the condition of sensory quality, the rate of water containing, tensile strength, elongation and thickness as detected targets by extreme vertices mixture design and method of fuzzy comprehensive evaluation. The thesis also proved the optimal technology stuff ratio was best by validating experiments. And the optimal technology stuff ratio of CMC to starch to glutin to glycerin to carrot pulp was 0.3:3:0.25:2.5:93.95. The optimal technology stuff ratio optimized the former.6) The thesis gained the optimal technology parameters at the condition of tensile strength, elongation and thickness as detected targets by quadric orthogonal rotary unitized design. The optimal technology parameters were: The drying temperature was 63.7℃. The drying temperature was 6.27h. The volume of carrot pulp was 125.34ml. And technology parameters were optimized farther.The innovation points of the thesis:1) The author put forward a set of engineering properties evaluation system of vegetable paper wrapper;2) The author analyzed the mechanism of making paper in microcosmic angle, that was in angle of the constitutes and characteristics of carrot fiber;3) The author prepared edible wrapper based on carrot at the fist time, and optimized the technology.The thesis made carrot as the basic material, which enlarged the field of carrot's deep process. The experiments and conclusions of vegetable paper in the thesis are valuable to pilotscale experiences and industrialization. At the same time, they offer worthy consults or lessons and reference on trial parameter for equipping the other for use by the military foods. Further more, the experiments and conclusions of vegetable paper in the thesis offered some referenced value for the study and developing of edible wrapper.
