Our country teems with beer's spent grains, as beer's spent grains contains more dietary fiber than proteid, manufacutures now send it direct as low-cost feedstuff or manure . But because beer's spent grains has too much moisture , it can't be stored for a long time, especially in summer, it tends to turn bad soon. So in summer if the beer's spent grains can't be sent to the farmers on time, the manufactures have no chance but to brush it off as castoffs. It not only wastes the proteid but also pollutes the circumstances. Some internal manufactors drying beer's spent grains before they send them, but it's a waste of energy sources and high-cost. As the price of feedstuff is low, the manufactors usually loose their money.It has been reported overseas that beer's spent grains is a nice source of DF, and it is easy to be absorbed. As peoples's life enhancing and dietetic conficturation changing, people take less DF day after day, at the same time, people have more disease caused by bad dietetic conficturation day after day. DF plays very important physiological function to keep people's healthy, for example, to and adjust blood sugar and so on. So people bagan to pay more and more attention on studying and implodering DF and food contains DF.99% of the DF is IDF in nature. Its main effect is accelerating intestines'peristalsis,and defending people from astriction and recta cancer. But SDF's main effect is on metabolize ,for example accelerating carbohydare's and fat's metabolize, and defending people from diabetes, hypertension,and cardiopathy. So, DF's function is contacted tightly with SDF'S and IDF's percent, and if the SDF's percent is improved ,the DF's function will be improved too .In this experiment, the technics of making general use of beer's spent grains and improving its attributes was basically studied; the technics of making general use of beer's spent grains has been designed, the IDF,SDF and proteid of beer's spent grains has been distilled by this technic. The most important technics has been studied, and optimal condition on hydrolyzing proteid by papain has been confirmed.The technics of improving beer's spent grains attributes in the both action of alkali sock and ultra-fine pulverization in wet processing has been studied, and optimal condition on SDF percent,retention rate and expansion rate and viscosity of IDF has been confirmed. The modality and configuration of both beer's spent grains and IDF distilled from it has been observed and contrasted, it testified the technics of both action of alkali sock and ultra-fine pulverization in wet processing can improving beer's spent grains's attributes.The conclusions are as followed:①The technics of making general use of beer's spent grains has been designed, the IDF,SDF and proteid of beer's spent grains has been distilled by this technic. By this technics , it will improve the manufactures'income and reduce the environmental pollution.②The technics of improving beer's spent grains attributes in the both action of alkali sock and ultra-fine pulverization in wet processing has been studied. After equality test and single factor test ,we got the single factor curve of change of proteid's hydrolyze percent ,caused by change of pH, temperature, the concentration of enzyme and materiel .③The optimal condition on SDF percent,retention rate and expansion rate and viscosity of IDF has been confirmed as follows: in 65℃,pH 5.6, the concentration of enzyme is 0.4%, the concentration of materiel is 18%, the functionary time is 2.5h. And the conclusion is that, the proteid's hydrolyze percent is 52.34%.④The technics of improving beer's spent grains attributes in the both action of alkali sock and ultra-fine pulverization in wet processing has been studied. After equality test and single factor test ,we got the single factor curve of SDF percent,retention rate and expansion rate and viscosity of IDF, caused by pH, temperature and granularity. ⑤The optimal condition on SDF percent,retention rate and expansion rate and viscosity of IDF has been confirmed as follows: in 70℃,pH 10, granularity is 10μm, the SDF percent achieved the tiptop is 5.61%; in 60℃,pH 10.5μm, granularity is 5, the viscosity of IDF improved most ,as it improved 153.43%; in 40℃,pH 9, granularity is 15μm, the retention rate of IDF improved most, as it improved 17.28%; in 80℃,pH 9.5, granularity is 20μm ,the expansion rate of IDF improved most, as it improved 67.33%⑥The modality and configuration of both beer's spent grains and IDF distilled from it has been observed and contrasted. The conclusions are as follows: after ultra-fine pulverization in wet processing, the granularity of the beer's spent grains IDF reduced evidently,but its configuration is still compact and inerratic; after alkali sock, the granularity of the beer's spent grains IDF didn't change distinctly, but its configuration is eroded badly; after the both action of alkali sock and ultra-fine pulverization in wet processing, the granularity of the beer's spent grains IDF reduced evidently, and its configuration is more extended than before, the inside is able to exposure out. it testified the technics of both action of alkali sock and ultra-fine pulverization in wet processing can improving beer's spent grains's attributes.
