In this paper, the use of fruit-vegetable wet ultra-fine grinding technology and granulation technology in product development of fruit-vegetable tablets is researched.The process of fruit-vegetable tablets: fresh fruit or vegetable→wet ultra-fine grinding→spraying and getting fruit-vegetable powder→mixing granulation→tabletting→fruit-vegetable tablets. First, by analyzing the structure of fruit and vegetable fiber, we know the best grinding field is shear force and abrasive force. Analysis on fluid flow of stator and rotor pulverizer and building of internal dynamics model of the grinding process comes to the material flow in the internal pulverizer and a way to improve the effect of grinding. Based on theoretical analysis,tests are made to fruit and vegetable fiber with stator and rotor pulverizer.Results show the effect of following factors: rotor speed, smashing time, rotor slot size and liquid ratio. Based on the single factor test, a L9 (33) orthogonal experiment with three factors and three levels is made to optimize grinding process parameters.Second,modifying fruit-vegetable powder by granulation.we research on the granule binding mechanism,and discuss the granule growth modes: agglomeration growth mode and layer growth mode. Layer growth mode is used to establish particle growth mode in mixing granulation process, a particle growth formula is gotten. On the basis of theoretical analysis, combination with related experiments, we obtain the effects of various factors on fruit- vegetable powder granulation. And choose a suitable binder and its quantity.On the basis,researches are made on the main process parameters. Optimizing the fruit-vegetable tablets with the fuzzy synthesis evaluation, better products come,and the quality of products is qualified.Finally, we discuss the industrial application of fruit-vegetable tablets preliminary, design the processing system and choose critical equipment selection. Through the technical and economy analysis, we find that the industrialization of fruit-vegetable tablets is viable.
