As modern life's pace and the improvement of living standards, as well as for their own health concerns, freshness and nutrition, harmless and convenience of fresh-cut fruits and vegetables are growing in popularity. However, the fresh-cut fruits and vegetables organizational structure was destructed by man-made processing, the sensory and nutritional quality deterioration will be showed in the storage process.In this paper,the fresh-cut apples and lotus roots were researched in the modified atmosphere packaging system on pretreatment,respiration characteristic and technology,the packaging quality was evaluated by the principal component analysis,in order to reduce the fresh-cut products'quality loss in the storage.The research work mainly included as follow:(1)In air or low oxygen and high carbon dioxide, the optimal pretreatment will be obtained by comparison of physical and chemical pretreatment.The results showed that chemical pretreatment can keep the color, weight and hardness of fresh-cut apples and lotus roots. However, this treatment was worse than physical treatment in the keeping the content of acid and vitamin C. In low oxygen and high carbon dioxide, non-pretreated fresh-cut apples and lotus roots maintained good quality.(2)The respiration rate of fresh-cut apples and lotus roots were measured by the close system method. The parameters of the respiration model were determined by applying the Michanelis-Menten equation and the quadratic equation. The results showed that the pretreatment can reduce the respiration rate, but effect was not extremely obvious. The models are suitable for charactering the respiration rate of fresh-cut apples and lotus roots.(3)According to the attributes of fresh-cut apples and lotus roots, the synthetic evaluation system of fresh-cut fruits and vegetables on the MAP was put forward by the method of the principal component analysis. The optimum gas compositions were got finally. The results showed that the method of principal component analysis was useful in analyzing the quality of fresh-cut fruits and vegetables on the MAP and the results were reasonable.(4)The effect of high oxygen atmosphere on quality of fresh-cut fruits and vegetables was studied by experiments. The results showed that the high oxygen atmosphere can keep the fresh-cut apples and lotus roots freshly, appropriate the high oxygen atmosphere can control the fresh-cut product browning, loss of weight etc.. To different fruits and vegetables or different character of the same products, the effect is different. At the same time, to the different products, the suitable range of high-oxygen concentration and critical high-oxygen concentration is different.
