Compared with conventional methods, aqueous enzymatic extraction technology has such advantages as: shorter process, safe and simple operations without solvent contamination, and production of oil and hydrolyzed protein with good quality.The aqueous enzymatic extraction of oil and hydrolyzed protein from peanuts was introduced in this article. The optimum parameters for hydrolysis using Alcalase were established by the single factor and orthogonal test. The optimal processing conditions were as follows: reaction temperature 60oC, pH 9.5, seeds/water ratio 1:5(w/w), alkaline extraction time 90min, enzyme amount 1.5%(w/w)and reaction time 5h .Under these conditions, the free oil and hydrolyzed protein yields were 79.32% and 71.38% respectively.As1398 was chosen to hydrolyze the residue and emulsion. By optimizing the parameters, the total free oil and hydrolyzed protein yields were 93.10% and 87.93% respectively.On the basis of lab scale experiment, the aqueous enzymatic extraction of oil and hydrolyzed protein from peanuts both with coat and without coat were carried out in industrial scale. Flottweg Tricanter was used to separate oil, hydrolyzed solution and residue, which was effective. The free oil and hydrolyzed protein yields of peanuts with coat were 79.68% and 73.06% respectively; those of peanuts without coat were 81.95% and 72.20% respectively. The results have confirmed the feasibility of continuous production in factory.Through cooling, concentration and spray drying, hydrolyzed peanut protein solution could be changed into powder. According to the ingredients of anyway protein powder, hydrolyzed peanut protein and whey protein concentrate were mixed at different ratio. The products'nutritional value was estimated through the mice's growth and metabolism experiment in this article, anyway protein powder was selected to be control group. The results showed that the peptides which were produced by hydrolysis were good to mice's absorption and utilization; when the hydrolyzed peanut protein/ whey protein concentrate ratio was 90∶10(w/w), the food utilization of female mice and male mice were 10.54% and 10.97% respectively, 1.87% and 2.44% were increased compared with control group .The digestive rate were72.72% and 80.16% respectively, the metabolic rate were 52.87% and 66.64% respectively, both the digestive rate and the metabolic rate were notably raised compared with control group(P<0.05,except digestive rate of female mice).
