In order to produce microporous starch, the best craft parameter andpath were studied as well as the affect of enzyme hydrolysis treatmenton the formation of microporous starch from rice starch. Sequently, thesurface properties, physicochemical properties of the starch granulesafter treatment were studied by means of SEM. Finally, the applying ofmicroporous starch as a microporous material adapt forabsorption, absorbed water-solube functional composition and oil-solublefunctional composition had also been studied in this paper. The resultsindicated:(1) The experiments were did to test the activity of eight kinds singleenzyme(such as glucoamylase,α-amylase,β-amylase and promozyme) fromchina. And the enzymes that are suit to produce microporous starch werecomfirmed: glucoamylase,α-amylase and promozyme.(2) The optimum parameter in using compound enzyme hydrolysis method toproduce microporous starch were studied respectively: such as reactiontemperature (42℃), reaction time (22.5h), enzyme dose and pH(3.6). Thebest compound enzyme is glucoamylase andα-amylase, the proportion ofglucoamylase andα-amylase 5:1 is proper.(3) The physicochemical character of microporous starch were studiedsystematically compared with the native starch: in the absorptionexperiment with water or oil, the ratio of absorption is higher thanthe native starch's.(4) The applying character of microporous starch were studied comparewith native starch. The results indicated microporous starch has betterabsorption ability of water-soluble functional compositions and oil-soluble functional compositions than native starch. In the experiment, the absorption ability of microporous starch is stable. It effectivelyreduced the loss of Vitamin C, lowed oxidation of Plant oil.
