In the paper, synthesis, classification and application of the present food preservatives about flimarates were introduced. They will have good prospect and great potentialities of market.The synthesis technique of acylating chlorination and esterification of mono-methyl fumarate were designed and optimized. The aim product mannose methyl fumarate with 3.2 degree esterification (DE) was prepared and analized. In addition, the anti-microbial activity was also studied.1) synthesis and analysis of mannose methyl fumarateMannose methyl fumarate was prepared in 3 steps. Firstly, maleic anhydride was esterified by methanol and followed by isomerization to form mono-methyl fumarate, and here, its synthesis process was mainly referenced some related literature. Then mono-methyl fumarate reacted with thionyl chloride to form mono-methyl fumarate chloride (MMFC). On the investigating the effects of reaction temperature, reaction time and the ratio of raw material, etc. on the yied, the optimum reaction conditions were obtained by using orthogonal experiment design. The yied of MMFC was to 94.7%. And last, mannose methyl fumarate with 3.2 DE was prepared by MMFC and mannose in the presence of N,N-dimethyl formamide as solvent. In the technical optimization, the ratio of MMFC to mannose was obtained by the effect on DE of mannose methyl fumarate and anti-microbial activity of colibacillus. And other reaction parameters, including absorbent and its amount, reaction temperature, reaction time and the amount of solvent, etc. were obtained by mono-factor experiment, in wich the yield was investigated as index mark.Mannose methyl fumarate with 3.2 DE was analyzed by UV spectrum, IR spectrum, Thin-layer chromatogram and Element analysis to assure its structure. And its anti-sensitivity and solubility were also given.2) anti-microbial characteristics of mannose methyl fumarate The anti-microbial characteristics of mannose methyl fumarate with 3.2 DE was studied. The minimum inhibition concentration and the growth inhibition conditions of mannose methyl fumarate on bacillus, barm and mildew. On the basis, the anti-microbial activity of mannose methyl fumarate was also compared with shanlisuan and dimethyl fumarate.
