A high pressure treatment-in contraditiction to a classical heat treatment, there is little effect on flavour, colour and vitamins, but microorganisms and enzymes can be inactived if the applied pressures are high enough. This paper mainly to the Bacillus subtilis enzyme antioxidant system: catalase (CAT), Glutathione Peroxidase (GSH-Px), superoxide dismutase (SOD) as a major study.All the tests were executed in a randomized order to exclude the disturbing effect of environmental factors. Effect of three main factors (pressure, temperature and dwell time) in UHP treatment on CAT,SOD,GSH-Px activity was investigated, and all experiments were designed and optimized with Box-behnken concept of RSM. Results showed that:(1)The pressure, temperature are believed to be significant factors for UHP treatment of inactivating CAT,SOD,GSH-Px, and their significant level is pressure>temperature;Within the 20 minutes, dwelling time on the activity does not significantly impact;(2)The regression equation (model) for UHP treatment to CAT,SOD,GSH-Px was established, and also could predict CAT,SOD,GSH-Px residual activity in this experimental conditions;(3)Design Expert software through selected randomly 10 Groups verify an experiment to test the validity of the model;(4)The range of independent variable factors to inactivated 80% CAT, SOD, GSH-Px activity of the normal one and the treatment parameters of 10 groups were optimized.
