The fake and shoddy products do immeasurable harm to our society, which damage the interest of enterprises and consumers. Consequently,the anti-counterfei- ting technology is one of the important methods to solve this problem. Many functions of the anti-counterfeiting technology are known as follows: firstly, it can prove for forgery and other fake criminal activities. Secondly, the research of anti-counterfeiting technology can provide fidelity marks for the market. The anti-counterfeiting labels specially and difficult to fabricate made by the new technology guarantee the legitimate interest of the marketing firms. Thirdly, it can supply the technical consultations to the government to manage the anti-counterfeiting business. Last, it could communicate the anti-counterfeiting information, which services for the policy of our government agencies.People are paying more and more attention to the foodsafety issues, which relate to our health. Lots of comitiva driven by the huge profits are wildly manufacturing and selling fake and shoddy products, which seriously disturbes the social order. Emergencies caused by eaten counterfeit are emerging in an endless stream, and even lead people to death. For these reasons, how to improve the foodsafety attract great attention. And the application of anti-counterfeiting technology is one of the significant means to raise the foodsafety.This paper is to develop the application of food anti-counterfeiting chromogenic materials. The full text can be divided into three parts:The first part is the introduction of the anti-counterfeiting materials, the markets'general situation, the classification and all kinds of anti-fake printing ink in the market.The second part is the research of photochromic materials, which are high effective but cheap in practice. The blue shade composition are obtained by synthetizing Tb(TTA)3Phen doped by La, Y rare earth ions and analyzed by fluorescent. It has high optical properties, but low cost of production. The optimized composition has broadband absorption in ultraviolet region, emitting characteristic peak of Tb and has predominant photo-thermal stability. So as a photochromic material, it provids a new opportunity to apply in ultraviolet fluorescent ink as a novel addition materials.The third part is to do research in new anti-counterfeiting materials. Used of the amylase in saliva to destroy the iodine-starch complex compound, it can achieve the chromogenic reaction from blue to colorless.However, the nature of amylum limits its activity, such as chilled water infusibility and long time to react with the amylase. In this part, the activity of starch is increased by the chemical methods—esterify and gr- aft copolymerization. The phthalic anhydride is used as modifying agent to synthesize esterified modified starch. The water-solubility of the product is improved, which can apply in water intaglio printing ink; Acrylamide and methyl methacrylate as graft mo- nomer to participate in the graft copolymerization, ammonium ceric nitrate reacting as evocating agent, and amylum reacting as graft framework. The graft copolymer has d- ouble fine performance of starch and monomer, which can apply in water intaglio pri- nting ink. The time of amylase breaking up iodine- starch complex compound is larg- ely shortened [0]for the increased activity of those mentioned three modified amylums. [0]Hence, those modified technology are benifical to consumers to distinguish the count- erfeit in a few minutes.
