It has studied and analyzed basic ingredients of cyperus esculentus and its active ingredients with functions. Basic ingredients in cyperus esculentus are protein, fat, sugar, starch and water with their contents 8.00%, 26.50%, 23.35%, 23.21% and 7.00% separately. This result is similar to the report in document data. From qualitative and quantitative analysis to active ingredients of cyperus esculentus, we could get that it has been detected that cyperus esculentus contains organic acid, steroid and terpenoid, but flavone, anthraquinone, phenols, coumarin, lactone and cardiac glycoside have not been detected. Chromatographic results on thin layer of cyperus esculentus sugar have shown: Cyprus esculentus sugars are mainly divided into cane sugar, glucose, fruit sugar and raffinose, other sugars have not been detected. Results of qualitative and quantitative analysis on active ingredients have shown: effective ingredients in cyperus esculentus have a little bit few kinds; and there are few kinds of effective ingredients in alcohol soluble part detected, while variety of effective ingredients in lipoid part has been detected for comparatively a lot, in which content of vitamin E is 0.15% and content of sterol is 0.53%, which explains that nutrition in cyperus esculentus oil is rather high. Seeing from composition of fatty acid of cyperus esculentus oil, oleic acid content could reach 52.57% to an extreme, next is hexadecanoic acid and linoleic acid with contents more than 20%. That explains that oil in cyperus esculentus is not dry oil, which is with good inoxidizability.Based on single factor test, orthogonal experiment design will be done on optimization of technological conditions of oil extraction, L9 (33), three factors and three levels will be chosen to do orthogonal experiment. The result shows: influence sequence on text index (extraction ratio) by each factor from large to small is: B (diffusion time)>C (solid-liquid ratio) >A (diffusion temperature) with the best technological condition B3C2A2, which is to say that diffusion time is 6h, Solid-liquid ratio is 1:2.5 And Extraction temperature is 65℃.
