Polysaccharide from edible fungus has positive impact on anticancer, antiviral, retarding aging and reducing cholesterol. China is a major edible fungus producer in the world, but the products of further processing lack of international competition. The manufacture of polysaccharide extraction is fairly outdated,and the half-manual and half-machine mode has a serious effect on product quality and production efficiency. Hence the ultrasonic extraction technique, which has such advantages as energy saving and high extraction rate, should be applied to the manufacture of polysaccharide extraction from edible fungus, and improving the automatic level of the polysaccharide extraction processing equipments have an important practical significance for accelerating the industrialization and modernization of edible fungus industry in China.Firstly, the theory of ultrasonic extraction and its technical process are introduced detailedly. And several orthogonal experiments of lentinan extraction are designed for pilot study. The technological parameters of industrial manufacture are determined through the range analysis and variance analysis. These also provide more information for ultrasonic extraction of polysaccharide from other kinds of edible fungus.Secondly, the control system of ultrasonic extraction is designed totally according to the request of automatic manufacture, and the dissertation puts forward the new control scheme based on IPC-PLC distributed control system: the super-ordinate computer supervising system which is composed of PC and configuration software MCGS, and the basic control system which is composed of PLC, text display, and various sensors and actuating mechanism. The basic control system designed for hardware and software on the basis of control scheme and field-equipment control request. The dissertation explains the I/O address distribution, the selective style of PLC, and designs the PLC program by using the order controlling design method.Finally, the super-ordinate computer supervising system is designed by the configuration software MCGS. It can display the manufacturing process of ultrasonic extraction, supervise the running of equipments, deal with the real-time alarm, and search the systemic information by communicating with the basic PLC. And the dissertation describes how to fulfill all functions which are stated above in detail. Furthermore, the good interactive interface of supervising system is simple, visual and convenient to use.
