5'-GMP is classified as flavourous nucleotide and 5'-GMP sodium has synergistic effect which enhances sweet and meaty tastes and inhibits salt, acid, bitter, fishy and burnt smell when mixed with MSG. With the continuous improvement of people's living standards, the demand of 5'-GMP sodium was increasing correspondingly, therefore a higher quality was required. As the intermediate, 5'-GMP's quality played a decisive role on the final products. To stabilize and improve the quality of 5'-GMP, experimental investigation was applied in the research of reactive crystallization process.From the view of 5'-GMP molecular structure, using a popular molecular simulation software Cerius2, some significant predictive work are processed in theory. First, A Monte Carlo simulated annealing process (MC-SA) searches the lattice energy hypersurface for probable crystal packing alternatives from 5'-GMP molecular structure. Optionally, these potential structures are clustered into unique groups based on packing similarity. The geometry of each unique structure is optimized with respect to all degrees of freedom. The final structures are ranked according to lattice energy. The resulting low-energy crystal structures are potential polymorphs. Predict crystal morphology of the most stable space cell of 5'-GMP from BFDH method and AE method respectively and research the molecular arrangement of main crystal face from AE method.The solubility of 5'-GMP was measured in water and ethanol-water mixture solvent by laser method. And the influence of pH, temperature and ionic strength on the solubility of 5'-GMP showed that 5'-GMP is slightly soluble compound and solubility increases with the rise in temperature, and behaving a "U" curve varied with the pH value. Crystallization metastable zone width was researched.The main factor which effect crystallization process was investigated, including reaction temperature, alkali concentrations, pH, materials concentration and stirring speed. Optimum operating conditions of 5′-GMP crystallization process was carried out.
