Resveratrol is a kind of polyphenols which is exsisted in grape, poly and etal, Resveratrol has cancer, cardiovascular protection, anti-oxidation, anti-free radical, estrogen regulation, anti-mutagenic, anti-bacterial anti-inflammatory, transgenic, radiation protection, and many other pharmacological effects.There are abundant grape resources in china, resveratrol exsist in grape widely of different tissue; resveratrol content of grape skin is 120μg·g-1, resveatrol content of grape is 30μg·g-1.with the rapid development of wine industry, a large amount of grape waste is generated, grape skin and residue contains more polyphenols such as resveratrol, but most were abandoned as fertilizer, if uitilize them well, can not only reduce environmental pollution, but also can be get considerable economic benefits.In this experiment, it is aimed chiefly at residues of grape which is wine by-product in industrial production and the seed, peel, pedicel, leaf, petiole of wine grape and edible grape, exploring extraction method of the highest extraction rate of resveratrol and lower costs; using organics solvent is done to extract resveratrol in seed, skin, pedicel, leaf, petiole of grape and detect it, analyzing the different of reveratrol content in the variety and different tissue; utilizing UV which induct different material of grape to synthesis resveratrol, studying the effect of different UV irradiation time on resveratrol syntheses .The results show that:Resveratrol is extracted by organic solvent extraction, and inspected the effect of five factors (extraction time, extraction temperature, extraction times, extraction solvent, the ratio of grape residue to solvent on resveratrol extraction rate in the residues of grape, the optimal technological conditions are as follow: the ratio of grape residue to ethyl acetate 1:30, extraction temperature is 50℃, extraction time is 12 hours, the number of extraction is 2.the resveratrol extraction rate in the skin and residue of grape is 52.12μg·g-1.Resveratrol is extracted by enzyme hydrolysis extraction, inspecting the effect of five factors(enzyme hydrolysis temperature, enzyme hydrolysis time, extraction temperature, extraction time, the ratio of grape residue to solvent) on resveratrol content in the skin and residue of grape, the optimal technological conditions are as follow: the ratio of grape residue to ethyl acetate 1:20, enzyme hydrolysis temperature is 50℃, enzyme hydrolysis time is 90min, extraction temperature is 30℃, extraction time is 50min, the number of extraction is 2. the resveratrol extraction rate in the skin and residue is 160.37μg·g-1.Resveratrol is extracted by ultrasonic extraction, inspecting the effect of three factors(extraction temperature, extraction time, extraction solvent)on resveratrol content in the residue of grape, the optimal technological conditions are as follow: ethyl acetate as extraction solvent, extraction temperature is 10℃, extraction time is 20min, ultrasonic power is 100w. under the optimal extraction conditions, resveratrol extraction rate in the skin and residue of grape is 79.58μg·g-1.Three extraction method is compared, the extraction method of resveratrol extraction rate from high to low followed by enzyme hydrolysis extraction>ultrasonic>organic solvent extraction, enzyme hydrolysis extraction is more superior than ultrasonic extraction and organic solvent extraction.The content of resveratrol changed significantly in different varieties and tissue, the content of resveratrol of wine grape is higher than edible grape, Pinot Noir is the relatively highest resveratrol average content of resveratrol grape varieties, leaf, and especially pedicel has more resveratrol content than other organs in the grape varieties. UV induction has certain effect on resveratrol content in the different material of grape; there are differences of the results of different material of grape which is inducted by UV and control grape.
