Malts are the main material for beer malts,while quality of malts is the main factor for beer,Gansu No.3 Beer Barley is the special industry of Gansu province,the experiment was studied to improve malting process and select the additives for Gansu No.3 Beer Barley in this paper.The experiments were studied about the steeping process,germination condition and additives making malt quality better by petri dish,porcelain dish and enterprise Large-scale production.The intention of traits was to determine the optimal steeping temperature,steeping method and relationships between steeping times and steep-out moistures and the best germination temperature,germination method during the best steeping process by measuring the germination rates and ratios of root bud and leaf bud versus barley,saccharification time,extract,a-amino nitrogen,Kolbach,diastatic power and then the optimum density of single additive and combination between two or three of them in the special steeping and germination.The results showed:the higher temperature,the shorter steeping time.when steeping temperature was 15℃,the steeping time was 28 h,20℃24 h,25℃and 30℃both 20 h and two of them had no significant variance in the same steeping method and steep-out moisture of 43%.steep-out moisture was different in the different steeping methods,the optimal temperature was 30℃in immersing 4 resting 4,25℃in immersing 4 resting 8 and immersing 6 resting 6.immersing 4 resting 8 was better in the same steeping temperature.Results of germination:the optimum temperature was 16℃,and best germination method was decreasing-temperature style (25→22→19→16→13)℃.The additives were studied carefully,gibberellin GA had significant influence on germination of barley,the best density of GA 0.2 mg/kg;formaldehyde HCHO inhibited the growth of root bud and leaf bud notably,the best 0.05%;potassium bromate KBrO3 restrained the growth of root bud and leaf bud,the optimal 100 mg/kg; sodium hydroxide NaOH also inhibited the growth of root bud and leaf bud significantly,the best 0.2 g/L.the best combination effect of two additives in four:(0.2 mg/kgGA/0.15 g/LNaOH)>(0.25 mg/kgGA/50 mg/kgKBrO3)>(0.05%HCHO/0.2 mg/kgGA);the three combination effect of four additives:(0.05%HCHO/0.25 mg/kgGA/50 mg/kgKBrO3)>(0.025%HCHO/0.2 mg/kgGA/0.2 g/LNaOH)>(0.2 g/LNaOH/0.25 mg/kgGA/50 mg/kgKBrO3).The effect of new process is superior to old one by applying the results of experiment to enterprise.
