As a new generation of health foods, calcium pyruvic has functions of supplying calcium, losing weight and eliminating the fat, increasing stamina, improving cardiac function and preventing cardio-cerebral vascular sclerosis. So far, there is no side effect of calcium pyruvic was found, it is widely used as raw materials of food processing and adjuvant materials of health foods. In this study, we used the reaction of pyruvic acid and calcium chloride to produce calcium pyruvic The factors of this reaction were researched systematically, and the synthesis conditions were optimized, which aimed at providing theoretical and technical basis for practical production. There are the results :(1)The ion exclusion chromatogram-ultraviolet(IEC-UV) method detecting the content of calcium pyruvic acid in health foods is simple, sensitive, quick operating and accurate results. It's fit for detecting the content of calcium pyruvic acid of compound foods.(2)According to the initial optimistic experiments and uniform experiments of calcium pyruvic acid synthesis conditions, the order of factors effected on the production is: concentration> the mutual effects of temperature and formula proportion>time. The ranges of the best conditions are : the temperature is between 70-90℃, the time is between l-3hours, the concentration of sodium pyruvic acid is between 5%-15%, the molar ratio of the consistency of sodium pyruvic acid and calcium chloride is between 1:1~1:2.(3)The optimistic results of technology parameter of sodium pyruvic acid and calcium chloride synthestizing calcium pyruvic acid is : the temperature is 90℃, the time is 2 hours, the concentration of sodium pyruvate acid is 15%, the molar ratio of the consistency of sodium pyruvic acid and calcium chloride is 1-1. Under these conditions, the feild of calcium pyruvic acid is the greatest.(4)The optimistic results of technology parameter of sodium pyruvic acid and calcium chloride synthestizing calcium pyruvic acid showed that the order of factors effected on the field is: concentration>proportion>temperature>time. It means that the greater concentration, the more calcium chloride, the higher temperature the field is greater. The optimal level combination is C3D1A3B2.(5)Using the optimistic technology parameter to expand the production of calcium pyruvic acid, making full use of materials by recovering the filtrate many times, the field was enhanced greatly, the rate of four times recovery is 63.8%.
