| ChongQing chaffy dish is a special kind of diet culture.This paper discussed the security of ChongQing chaffy dish in the change of contents of elements during chaffy dish boiling.The results as follows:1.After a long time boiling process,there must be some metal elements dissolved in the container made of mixed stuffs which cause the changes of the compounds the original chaffy dish. Because the variety of the container,the metal element during dissolving process is different from each other.The contents of cadmium,lead,chromium,arsenic have increased in the container made of Iron after a boiling process,but there are no obviously differences in the elements of cadmium, lead,chromium,arsenic in the stainless steel container(P>0.05).Using the container made of Iron or stainless steel container to boiling the chaffy dish,but for the accumulated of the metal elements between grease and soup,the accumulated rates of arsenic in the grease is faster than in the soup,and the cadmium,lead,chromium are the opposite.2.Using the container made of Iron or stainless steel container to boiling the chaffy dish, inorganic cadmium is mainly in soup.Using the container made of Iron to boiling the chaffy dish after 24h,the content of inorganic cadmium in soup is increased up to 0.55mg/L.Organic cadmium is mainly in lipid,using iron cantainer boiling the chaffy dish after 24h,the content of organic cadmium is increased up to 0.08mg/kg.The quality of this stainless steel container is better,the dissolution of cadmium was not obviously.It can be see that cadmium is mainly in inorganic form of cadmium in soup.So far,the toxicity of inorganic cadmium should be studied.3.Using the container made of Iron or stainless steel container to boiling the chaffy dish, inorganic lead is mainly in soup,and the Using the container made of Iron to boiling the chaffy dish after 24h,the content of inorganic lead in soup is increased up to 2.87mg/L.Organic lead is mainly in lipid,using iron cantainer boiling the chaffy dish after 24h,the content of organic lead is increased up to 1.04mg/kg.The quality of this stainless steel container is better,the dissolution of lead was not obviously.It can be see that although the total lead content limit has exceeded the national standards,lead is mainly in inorganic form of lead in soup.Inorganic lead is less toxic, therefore it is relatively safe.4.Using the container made of Iron or stainless steel container to boiling the chaffy dish, soluble chromium is mainly in soup,and the main inorganic chromium is mainly trivalent chromium,hexavalent chromium is rarely.Using the container made of Iron to boiling the Chaffy Dish after 24h,the content of trivalent chromium in soup is increased up to 0.59mg/L.Organic chromium is mainly in lipid,using iron cantainer boiling the chaffy dish after 24h,the content of organic chromium is increased up to 0.18mg/kg.The quality of this stainless steel container is better,the dissolution of chromium was not obviously.It can be see that chromium is mainly in trivalent form in soup.Trivalent chromium is less toxic,therefore it is relatively safe.5.Using the container made of Iron or stainless steel container to boiling the chaffy dish, inorganic arsenic is mainly in soup.Using the container made of Iron to boiling the chaffy dish after 6h,the content of inorganic arsenic in soup is highest up to 0.48mg/L.Organic arsenic is mainly in lipid,using iron cantainer boiling the chaffy dish after 24h,the content of organic arsenic is increased up to 0.82mg/kg.The quality of this stainless steel container is better,the dissolution of arsenic was not obviously.It can be see that although the total arsenic content limit has exceeded the national standards,arsenic is mainly in organic form of arsenic in lipid..Organic arsenic is less toxic,therefore it is relatively safe. |
