Caseins is a very useful substance which can be used in many fields such as paper making, leather, latex, foodstuff and so on. Protein , the main component of Caseins in milk, is made from skim milk. We can get caseins from skim milk by adding acid, subsiding, dehydrating crushing and desiccating.Nowadays, the caseins have a great market in China. But there are many problems in producing caseins, especially in the process of separating separator fat skimmed milk from milk using the dish centrifugal, such as the difficulty of removing sediment and the low separate efficiency. The reason is that the structure and operate parameter is not appropriate to actual circumstance which lead to heavy cost and waste. So it is necessary to investigate this problem.In this thesis, it analysed these problems based on property of milk and principle of disc centrifugal separator. It brought forward the cause of sediment and some measures which can resolve these problems. Then it mainly analysed some structure and operate parameters, such as disc generation line cone angle, clearance between two dishes, drum rotate speed, inner diameter of sediment exit, and the quantity of adding diluent and so on by adjusting, which influence these problems greatly. According to this parameters, it defined objective function and calculated the main structure parameters of the disc separator and got the variable parameters' change scope of the disc separator. Finally, it established a mathematical model according to parameter of disc centrifugal and analysed the flow field of the dish centrifugal separator.Then put up CFD simulation platform of the disc separator using FLUENT software. Through simulation test, it proofread these parameters and got the optimum parameters of separating fat skimmed milk from milk using the dish centrifugal separator. Therefore, the problem of removing sediment is resolved effectively.What we done in this research can provide positive help in separating skimmed milk and fat with the dish centrifugal separator.
