The preservation of aquatic food product has always been the more difficult questions, because aquatic food product carrys a large number of micro-organisms which easily cause its'spoilage.To solve this problem, kisu fish are used as raw materials in the experiment, and the surface of fish is treated by low-temperature plasma.This work is focused on researching the best dealing condition of low temperature plasma and effect of plsama treatment on the Quality Changes of fish, comparing with the ozone's ability to disinfect the germs. The results of research are as follow.1. The study on the optimum sterilizing condition of three kind of germs Treating bacteria, mold and yeast by low-temperature plasma, investigated low-temperature plasma on the killing effect of killing micro-organisms. The results showed that the optimum sterilizing conditions of low-temperature plasma were15min, 300w and 45Pa。2. Effects of low-temperature plasma preprocess on the micro-organisms of fish Select ing treatment time, treatment intensity, and vacuum packaging for the factors, studyed the effect of different factors on the impact of sterilization. The results showed that low-temperature plasma has no effect on vacuum-packed fish and Studied low-temperature plasma treatment time, intensity, and vacuum on the sterilization effect of fish.3. The study on the optimum sterilizing condition of low-temperature plasma on the fish Compared with the control group, colligated effect of various factors on the impact of sterilization. The results showed that the optimum sterilizing conditions of low-temperature plasma on fish were15min,300w and 70Pa.4.The study of low-temperature plasma on the quality of fish Compared with the control group, investigated the different low-temperature plasma conditions on the quality of fish. The results showed that low-temperature plasma has no detrimental effect on the quality of fish, retained natural flavor, nutritional value, or other properties.5. The study on low-temperature plasma compared with the ozone's ability Dealed fish with low-temperature plasma and ozone, contrasted two different methods of sterilization , The results showed that low-temperature plasma has marked effect in disinfecting the germs.
