It is an annual herbaceous plant. Since the 21st century, the yield and export volume of peanut in our country account for 40% and 30% of the total world amount respectively, but the incident of contamination of aflatoxin threatens the competitiveness of peanut in our country among the whole world market seriously. Aflatoxins are secondary metabolites of a closely related group of aspergilli: aspergillus. flavus, aspergillus. parasiticus etc. Aflatoxins, which are carcinogenic and mutagenic, are both acutely and chronically toxic.Aim of the present study was to investigate the contamination of aflatoxins in peanut grains, which are collected from different region, Guangdong province, Shandong province, Liaoning province, was confirmed by high performance liquid chromatography(HPLC), to research the storage characteristic of peanut under the environment fitting the growth of aspergilla, to study on the detoxification (Chemical inactivation) of aflatoxins in peanut grains by means of steeping in chlorine dioxide(ClO2) and aqueous citric acid solution.The results showed that the levels of aflatoxins contamination rate of B group in peanuts collected from different provinces were obvious lower than G group. The peanuts collected from Guangdong province have been contaminated most, Shandong province modest, Liaoning province least. Under optimum conditions mould rapidly contaminating peanuts during the 0~15 days, then the content of aflatoxins varied little. Aflatoxins contamination in almost all samples (after 15-day storage) exceeded GB2761-2005 and Commission Regulation (EC) No1525/98. Before harvest, the levels of aflatoxins contamination in peanuts were affected by many factors, origin, rotation, peanut plasma, irrigation, fertilization etc.Both solution of citric acid and chlorine dioxide have the ability of detoxification of aflatoxinin peanuts after steeping treatment. The results showed that with the increase of concentration, the increase of liquid to solid ratio and the prolonging of treatment time, B-aflatoxins concentrations in moldy peanuts became lower. The optimum detoxification conditions to the B-aflatoxins (98.60μg/kg) contaminated peanuts were confirmed as follows: citric acid concentration 80g/L, liquid to solid ratio (mL/g) 5:1, treatment time 30min, or chlorine dioxide concentration 10g/L, ratio of solution to substrate (mL/g) 5:1, treatment time 30min. The detoxicated peanuts can meet national standard (GB2761-2005).Before harvest, the levels of aflatoxins contamination in peanuts were affected by many factors, origin, peanut plasma and cultivation conditions. The storage condition is also an important control point, which affected the contamination of aflatoxins in peanuts. Both solution of citric acid and chlorine dioxide have the ability of detoxification of aflatoxin in peanuts after steeping treatment.
