In this dissertation, the production technology and condition of capsaithin and capsaicin were researched by enzymatic hydrolysis as well as solvent extraction with the chillies in Yan qi-XJ as materials.Furthermore, the capsicum-oleoresin extraction of above procession was used as material in following experiments in turn ,the capsaicin and capsaithin were separatid, the capsaicin and capsaithin were purified by macroporous resin ,and the primary condition was determined . The main results are described as below:1. The optimal decomposition condition of capsicum by enzyme: the addition level of enzyme was 0.3%, temperature 40℃,time 1h.2. The best extracting condition of red chilli color and capsaicinoid: solvent 90% ethanol , extracting temperature 90℃,two times extraction ,each for 2h respectively per raw material in solid-liquid ratio 1:10.3. The best of separation condition of red chilli color and capsaicinoid: oleo resin capsicum extracted by aether /ml: 2%NaOH /ml=1:1.5,20℃,20min. After aether was volatilized, the color scale of capsaithin was 104 by ethyl acetate extracted. After acids counteract alkali Hydrolysates, aether was used to extracting their reaction product, and the rate of extracting capsaithin was about 87%.4.AB-8 resin purification technology was used to separate capsaicin and capsaithin. The results showed that the optimized absorption condition of capsaicin was enter-sample solution concentration 189μg/ml, velocity of enter-sample solution 3V/h; The optimized desorption of capsaithin was mobile phase petroleum ether/ml: acetone /ml=4:1, the color scale of capsaithin was 215 after condensed, and the production yield rate was 3.87% . The optimized desorption of capsaicin was mobile phase 50% ethanol, the degree of capsaicin purity was achieved 21% ,and the production yield rate was 0.29%.
