The quality of the wheat dietary fiber has been studied systematically in this article,inclding the study on the basic ingredients,on the determination and degradation of the anti-nutritional factor-phytic acid,on the physical and chemical quality,on the storage characteristics and on the function of relieving constipation and defecating feces excretion in animal test,in order to provide some basis for the further development and utilization of the wheat dietary fiber,the main results are as follows:The study on the basic ingredients shows that, the content of dietary fiber of the six different kinds of the milled wheat bran covers from 30.5% to 35.7%,while the content of dietary fiber of the corresponding products covers from 75.5% to 78.8%.The same kind at different levels of the skinned wheat bran,the content of dietary fiber of the outer,middle and inner skinned wheat bran were 48.5%,37.8% and 26.3%,while the content of dietary fiber of the corresponding products were 87.5%,83.3% and 78.0%.A method named yellow phosphomolybdate colorimetry of determination of the anti-nutritional factor-phytic acid has been established.The phytic acid content of wheat dietary fiber determined by this method is 49.02 mg/g.The optimum conditions that while the pH is 4.0,temperature is 60℃and the time is 60min,the degradation of the phytic acid is up to 86.3% have been founded by the orthogonal experiment.The study on the microstructure shows that,when the particle size is between 60 and 100 mesh,the wheat diertary fiber has crystal structure of the network.The study on the physical quality shows that,when the particle size is between 60 and 180 mesh,the bulk density,the accumulation density,the sliding angle and the resting angle increase with the reduction of the particle size.The study on the physical-chemical quality shows that,when the mesh is between 100 and 130,its water-holding capacity is 4.21g/g,expansion of capacity is 3.25g/g,the absorption capacity of saturated fat is 4.72g/g,the absorption capacity of unsaturated fat is 2.37g/g,when pH is 2.0,the absorption capacity of cholesterol is 2.01mg/g;when pH is 7.0,the absorption capacity of cholesterol is 3.28mg/g;when pH is 2.0,the absorption capacity of nitrite ion is 31.98μmol/g;when pH is 7.0,the absorption capacity of nitrite ion is lost.The results of storage experiment show that,the temperature,the humidity and the time has a extremely significant impact on the storage characteristics such as odour,moisture content and the value of fatty acid of the sample.Among them,the temperature has a more significant impact on the value of fatty acid than the humidity and the time,while the humidity and the time has a more significant impact on the moisture content than the two others.Animal study shows that wheat dietary fiber has no effect on the weight of the mice;Samples of the dose group compared with constipation model control group, have a improved rate of ink,high-dose group were significantly different; Samples of the dose group compared with constipation model control group,first defecation time advances,5h particles of defecation increases,and the high dose group with a very significant difference.
