Starch octenylsuccinate was a kind of safe and efficient emulsifier and thickener made by starch and octenyl succinic anhydride (OSA) under controlled conditions. It had been widely used in food, textile, papermaking and pharmaceutical industry at home and abroad. This article mainly did research on the preparation technology of starch octenylsuccinate that taked slightly hydrolyzed starch as raw material, followed by its physicochemical properties and application in microcapsulation experiments1. Preparation of starch octenylsuccinateThe objective of this part was to obtain the best preparation process of starch octenylsuccinate, taking native starch and octenyl succinic anhydride as raw material and degree of substitution (DS) as evaluation index. The author did research on 5 parameters, namely: initial starch slurry concentration, pH, reaction temperature, reaction time and anhydrides concentration. Based on single-factor experiments, orthogonal experiments showed that comparison of parameters' influences on esterification was initial starch slurry concentration > pH > reaction temperature > reaction time. The optimal parameters were initial starch slurry concentration 50%, pH 8.5, reaction temperature 35℃and reaction time 4h, respectively. The DS of octenyl succinic anhydride modified starch under this condition was 0.0495.Structures of octenyl succinic anhydride modified starch were verified by infrared spectrum analysis, on the basis of which the products were used as emulsifier for the microencapsulation of DHA spirulina oil. Good results have been obtained.2. Physicochemical properties of starch octenylsuccinateApparent viscosity of starch octenylsuccinate was higher than native starch, but the former still displayed shear thinning phenomenon like the latter and was called pseudoplastic fluid. Solubility of starch octenylsuccinate was higher than native starch, freeze-thaw stability rised. Both had the same tendency with degree of substitution (DS). Transparence of starch octenylsuccinate was higher than native starch, too. Salt played an important influence on transparence, specially sodium chloride and aluminium potassium sulfate which made the transparence of starch octenylsuccinate reduce under low concentration. Sugar such as glucose and sucrose could also influence the transparence. Citric acid and tartaric acid made the transparence decrease in a small extent.3. Emulsifying property of starch octenylsuccinateDifferent factors' influence on emulsifying property and emulsion stability of starch octenylsuccinate was researched. Results showed that both emulsifying property and emulsion stability evidently increased as the increase of degree of substitution (DS). When dosage of starch octenylsuccinate increased, emulsifying property slightly increased, but emulsion stability reduced. Emulsifying property keep stable under different sodium chloride concentration or different citric acid concentration. Glucose made the two properties increase. Emulsifying property increased as time went on. Emulsifying property was the best when emulsified for seven minutes, when the temperature was kept around fifty centigrade under acidic conditions.4. Application in microcapsulation experiments of starch octenylsuccinateStarch octenylsuccinate and sodium caseinate were mixed as emulsifier to beused in microcapsule powder oil. Experimental conditions were as follows. Rate of corn to wainscoting was 1 to 1. Total solids content was 50%. Emulsification temperature was 50℃. Homogeneous pressure was 30MPa. Technological parameters of sponging drying underbrush were as follows. Inlet opening temperature was 185℃. Input quantity was 20ml·min-l. Gas flow pressure was 0.1Mpa. Evaluation results showed that all indexes of microcapsule powder oil were up to the mustard.
