The aroma compounds of young and aged Chinese "Yanghe Daqu" liquor samples were extracted by solid phase microextraction(SPME) and analyzed by aroma extract dilution analysis.There were alcohols,aldehydes,fatty acids,esters,aromatic compounds,phenols, sulfides and other aroma compounds.The most important aroma compounds in young and aged liquors were ethyl hexanoate,ethyl butanoate and ethyl pentanoate.Ethyl acetate,acetal, 1,1-diethoxy-3-methylbutane,butyl hexanoate,methyl 4-methylpentanoate,ethyl 2-methyl butanoate,2-pentanol,3-methylbutanol,aldehydes,ethyl heptanoate,ethyl 4-methyl pentanoate and ethyl benzoate were the secondly important aroma compounds in these liquors. Compared the OAV of these compounds,the most important aroma compounds in Yanghe liquors were ethyl octanoate,ethyl butanoate,acetal,ethyl 3-phenyl-propionate,aldehydes, ethyl 3-methylbutanoate,1-heptanol,ethyl acetate,ethyl heptanoate.The quantity ratio among the important aroma compounds(ethyl hexanoate:ethyl octanoate:ethyl butanoate:acetal: ethyl 3-phenylpropionate:aldehydes:ethyl 3-methylbutanoate:1-heptanol:ethyl acetate:ethyl heptanoate:ethyl pentanoate:3-methylbutanol:ethyl heptanoate:ethyl benzoate) was 1:0.0275~0.0792:0.0567~0.0773:0.0571~0.0858:0.006~0.007:0.0920~0.0948:0.0002~0.0003: 0.0002:0.3678~0.3924:0.0122~0.0253:0.0135~0.0171:0.0718~0.0797:0.0122~0.0253:0.0003.The most important aroma compounds in Erguotou liquor analyzed by GC-O and GC-MS were DMST,butanoic acid and 3-methylbutanol,2-phenylethanol,guaiacol,4-ethyl guaiacol and 2-phenylethyl acetate were also important for the aroma of Erguotou liquor. Compared the OAV of these compounds,the most important aroma compound was DMST and ethyl octanoate,ethyl hexanoate,1-heptanol,ethyl 3-phenylpropionate and ethyl acetate. The quantity ratio among the important aroma compounds(ethyl acetate:DMST:ethyl octanoate:ethyl hexanoate:1-heptanol:ethyl 3-phenylpropionate:ethyl 2-methylbutanoate: 3-methylbutyl acetate:ethyl butanoate:ethyl 3-methylbutanoate:nonalactone:4-ethylguaiacol: butanoic acid:3-methylbutanol:2-phenylethanol:2-phenylethyl acetate:methyl benzoate: ethyl lactate:lactic acid:acetic acid) was 1:0.0005:0.0010:0.0013:0.0004: 0.0002:0.0001:0.0012:0.0005:0.0001:0.0006:0.0005:0.0053:0.2307:0.0313:0.0029:0.0001: 0.5881:0.1689:0.2047。The concentrations of esters,ethyl esters,branch esters and major esters in Yanghe liquors were reducing along the aged years.However,the concentrations of alcohols,aromatic compounds and phenols were ascending along the aged years.The total concentration of esters in Erguotou liquor was slightly ascending,whereas the concentration of ethyl acetate was reducing in the aged process.The concentration of ethyl lactate was ascending in aged years.The concentrations of alcohols and aromatic compounds were ascending in the aged process.However,the quantity of aldehydes and acetals in Erguotou liquor were unaltered in the aged years.
