In this thesis, Canidia albicans, Candida tropicalis, Aspergillus niger, Escherichia coli and Staphylococcus aureus are taken as indicator bacteria,the anti-microbial and bactericidal properties of vinegar which made from rice straw and corn stalk as well as that of the biomass of factory's rice hull vinegar are systemically studied for the first time. The components of these kinds of vinegar have been analyzed by GC-MS and the morphologies of the strains have been observed by SEM technology. The results of the analysis are described as follows:First, the crude and refined rice straw and corn stalk vinegar have good antimicrobial properties. 4.76 % crude rice straw and corn stalk vinegar and 6.25 % refined corn stalk vinegar have strong anti-microbial functions, and the rates of inhibition on Canidia albicans were 100 %. And 12.5 % refined rice straw vinegar has strong anti-microbial function. The rate of inhibition on Escherichia coli was 100 %.Second, PBS, which contains 0.5 % lecithin, 5 % tween and 1 % Na2S2O3, could be used as the neutralizer of straw vinegar. 6.25 % crude rice straw vinegar and 14.29 % refined corn stalk vinegar have strong sterilization effects on Canidia albicans. The rates of sterilization were 100 %. 5.26 % crude corn stalk vinegar and 7.69 % refined corn stalk vinegar have strong sterilization effects on Canidia albicans. The rates of sterilization were 100 %.Third, when the biomass of factory's rice hull vinegar and the hexachlorophen of 300 times dilution(sused by chicken farm currently)are used in chicken farm, they both can reach the 100 percent sterilization ratio. Factory's vinegar can eliminate the smell of chicken manure in a short time,while the hexachlorophen of 300 times dilutions can't eliminate the smell.Fourth, serious cell deformation can be observated by SEM when Canidia albicans, Candida tropicalis, Aspergillus niger and Escherichia coli are acted by crude corn stalk vinegar, while no significant phenomena could be observed when Staphylococcus aureus is acted by crude corn stalk vinegar.
