Useing advanced high-performance issues, security, food processing green materials and processing technology, to study the graded eggs disinfection cleaning and key technologies supporting the production of traditional Chinese egg products (lead-free zinc-rich preserved products) large-scale production of key technologies.The research topics include:(1)Use 80% ethanol as solvent extracted from corn gluten zein, studied the microwave-assisted zein extraction process conditions and the use of quadratic regression rotary combination design study has been microwave-assisted extraction conditions for optimizing the extraction of zein mathematical regression model: Y = 23.43375 +0.67042 X1-0.16083X32-0.23813X2X4The best process parameters of microwave-assisted extraction zein as follows: 80% ethanol as solvent, a one-time by adding solvents, in the liquid feed ratio 14:1, 20 head of material particle size, microwave power is 420W, microwave treatment 8 times a total of 360s. Under these conditions extraction of zein was 25.68%.(2) Zein coating on the surface of eggs for the best solution: zein concentration of 10%, 5% glycerol its adding 35 ml/L, its adding oleic acid 10ml/L, impregnation temperature of 60℃, soaking time for 2.5min, drying temperature of 70℃.Zein coating used, the required weight of about egg membranes 5/10000 weight, and the results are satisfactory film. Benzoic acid, sodium diacetate and Calcium Propionate, three antibacterial agents were in the amount of benzoic acid added 2.0g/kg, sodium diacetate 10g/kg, Calcium Propionate 2.5g/kg when film Effect of small liquid coating can be added to the three antimicrobial agents in order to enhance the antibacterial properties of zein films.(3)At room temperature, the natural storage, the coating processing group of fresh eggs was stronger than the effect of non-coating treatment group; in the coating processing group, Calcium Propionate added as a bacteriostatic agent best pure zein film The relatively poor results. Storage at low temperatures(4~5℃), the effect of the preservation are followed: add the Calcium Propionate treatment group> add the benzoic acid treatment group > add the SDA treatment group.Low-temperature conditions, stored in a sealed bag of the treatment groups can not afford to film, but easily mildew; stored in non-sealed child care in the handling of eggs did not mildew group, but the film easy to play.(4) Zinc act preserved material processing has two baptist parameters, the first stage of curing time for 8d or 11d, the second stage of curing time for the 20d ~ 50d. Processing system using this method was preserved in the finished product significantly increased zinc; as a result of immersion in liquid lead have no lead, so the surface bright and clean without spots preserved, preserved eggs not lead, both beautiful and high nutritional value, has a good market prospects.
