Phytosterol mainly comes from the vegetable oil,which has many kinds of physiological functions.Phytosterol belongs to the oil-soluble material,it is not only difficult to be mixed and dissolved with the water-soluble material,but also difficult to be added evenly to water-soluble products,such as food,cosmetics and medicine,so that its application has be restricted,so the study on emulsification system of phytosterol is imperative.Phytosterol,as a raw material,the effect of emulsifying efficiency of different emulsifiers and the impact of emulsion stability of different stabilizers on it were discussed.In this paper,the single emulsifier impact on emulsification result of phytosterol and using Uniform design to optimizing experimental conditions were discussed.According to the trial,it identified that the best single emulsifier which emulsified phytosterol is sucrose ester,the best conditions for emulsification are adding 2.4%emulsifier, emulsifying time 38min,emulsifying temperature 40℃and oil-water ratio 1:2.After the final verification,under the experimental conditions,the absorbance corresponding to emulsifying efficiency is 0.851.With Atlases System detecting the best HLB value of the composite emulsifier which emulsifies phytosterol is 8.5.The more the HLB value of the single emulsifier deviation from the HLB value of the mixed emulsifie the less the interfacial adsorption,or vice versa. The result of the measurement of optimizing emulsion show that the emulsifying efficiency of the sucrose ester as the single emulsifie is similar to the emulsifying efficiency of the sucrose ester - monoglyceride - span 80 as the composite emulsify.Application of the experimental formula,we obtain that the emulsifying effect is best when the addition of the sucrose ester is 70%,monoglyceride 20%,span 80 10%.The best emulsification conditions obtained by the orthogonal experiment,is that temperature 60℃,addition of emulsifier 2%,oil-water ratio 1:3,emulsifying time 10min.The test demonstration according to the above test conditions show the absorbance after emulsification is 0.862. But according to the result of experiment,emulsifying efficiency of the single emulsifier emulsifier is worse than the composite emulsifier.When the research about emulsion stability of phytosterol,we choose a large amount of stabilizer added to the phytosterol and detect the total of composite stabilizer.At the same time, we do formula experiment about added stabilizer,finally make sure that the best formula of phytosterol emulsion are xanthan gum(20%),gelatin(52%),and guar gum(28%),and we use the orthogonal design method to make sure that homogeneous temperature is 60℃,oil-water ratio 1:3,the addition 1.5%,homogeneous time l0min.Because phytosterol is a powdered material with high melting point,in this paper,the impact of vitamin E and oleic acid on emulsifying effect of phytosterol is studied.Through a variety of single factor experiments to determine the optimum addion of emulsifier and stabilizer, phytosterol-water ratio and the addition of oil material.The experiment result shows that the result is best when oil-water ratio is 1:3,the addition of olic 0.15%,homogeneous time l0min and homogeneous temperature 40℃.
