Influence of coating with chitosan on the preservation of Chinese winter jujube under refrigerated conditions was studied. Also, the effect of coating with chitosan on the preservation of sweet cherry stored at both room and cold temperature was researched. The optimum concentration of chitosan coating on the Chinese winter jujube and sweet cherry were obtained. Results showed that:1. The optimum concentration of single-film treatment of Chinese winter jujube was 1.0% of chitosan concentration, and 7.5g / L of sodium alginate concentration, respectively. Coating with both chitosan and sodium alginate composite was better than single-film treatment. The results of Chinese winter jujube storage showed that the percentage of fresh fruit reached 70% after storing at cold temperature for 80 days, while that of the control was only 10%.2. The optimal concentration of chitosan coating on the sweet cherry was discriminating due to storage conditions. 1.5% of chitosan concentration got the best preservative effect storing at room temperature, while it was 2.0% of chitosan concentration for the sweet cherry under refrigeration to keep fresh. It was showed that coating with chitosan could extend the shelf life. Compared with the control, the shelf life was prolonged 3 days by 1.5% of chitosan concentration storing at room temperature, and 10 days by 2.0% of chitosan concentration storing under refrigeration.3. Coating with chitosan could keep the firmness of both Chinese winter jujube and sweet cherry, inhibit the decrease of content of Vitamin C, soluble solid and titratable acid, and slow down the respiration. It was a good method to keep fruits fresh.4. It was proved that coating with chitosan cold maintain the low content of malonaldehyde (MDA), the high activity of peroxydase (POD), also inhibit the activity of pectase.
