Food traceability is an important means in food safety management.Since the Food Safety Law of People's Republic of China states clearly in chapter 7 that food recall system should be established,establishment of food traceability is an important way to meet the society's need.In this study,we chose peanut as the material and studied the food traceability technology.The main conclusions go as follows:1.The whole food chain of peanut oil from planting ground to table was studied according to the HACCP management as well as the research on spot.It can be divided into five stages which include planting,harvesting,initial processing,pressing and selling & transport.The peanut oil traceability system based on electronic label and ERP system was established according to the key information screened from the peanut oil food chain.2.The changes of Aflatoxin B1,Aflatoxin B2,Aflatoxin G1,Aflatoxin G2 secretion of different microbial population from soil samples from Guangdong,Liaoning and Shandong province in different kinds of environment was analyzed.The results go as follows:group B and group G are competitive to each other.The toxins secreted in earlier period are mainly in Group G.As time goes on,the toxin in group B especially AFB1 increased substantially;the competitiveness in Guangdong area is not very obvious compared with the situation in Shandong and Liaoning area;the competitive situation is more obvious in humid environment.For the peanut samples from the three provinces,the toxins secreted in earlier period are mainly in Group G.After stored in high humidity conditions,the content of toxin in Group B increased.The ration of separate toxin to the total toxin has been initially defined.The discrimination rate was analyzed based on the AFG2/AFT,AFG1/AFT,AFB2/AFT and AFB1/AFT for the three areas.The correctly classified is 60.4%.3.Theδ13C andδ15N was analyzed for the soil as well as peanut samples from Guagndong,Shandong and Liaoning province.It was concluded that theδ13C andδ15N value can represent the soil characteristics and the discrimination rate was 85.7%.The discrimination rate against peanut samples is 70%;there was no difference on theδ13C value for different samples in different areas which means thatδ13C value of peanut was of no use to the origin traceability in this study.The predictive model was established forδ15N value of peanut,the correlation coefficient was 0.924.4.The content difference of 25 mineral elements such as Ag,Al,As,Be,Ca,Co,Fe, Mg,Pb,Sb,Th,U,Cd,K,Mo,Ni,Ba,Cr,Mn,Na,Tl,Zn,Cu,Se,V etc was analyzed. The results go as follows:contents of 13 mineral elements has obvious difference;8 elements were chosen into discrimination model,the F value were ordered as Cr>Mn>Na>K>Cd>Zn>Ba>Tl.The correctly classified which used Cr,Mn,Na,K and Cd as model was 93.8%.The predictive model was established by regression analysis through the correlation of the 8 elements in peanut samples with 25 elements in soil samples.
