| The deficiency of the nutrition is the widespread situation in the whole world. In order to improve the body qualities and healthy conditions of their own country's citizen, most countries have put out the fortification food successively, in this way they can fill up the lack of the important nutrition simples in people's daily meals. Especially in America, the nutrition fortification products has reached ten thousands species, which take possession of the 80% in food. Rice is the people's staple food in world, but the nutrition simples lose seriously in processing and washing process. Thus, in order to improve the body qualities and healthy conditions and fill up the lack of the important nutrition simples in people's daily meals, it has very important strategy significance to fortify the rice. In this research, by means of using the cereal as the carrier of the nutrition simples and making use of the single-screw cooking extrusion techniques, we have produced the cereal rice-typed dietary supplement of rice which can used as rice fortification. Thus the rice can be fortified by nutrition simples.The main research results are as following:1. Working out the prescription of the cereal rice-typed dietary supplement of rice (1)On the base of analysis of the extrusion characteristics of the raw material, according to the linearity layout theory, aiming directly at the nutrition request of product and some limited condition of raw material extrusion characteristics, programming with computer, we have worked out three base prescriptions of the cereal rice-typed dietary supplement of rice which adapt to different people's edible (the common,the adolescent, the high food fibrin and calcium). The prescriptions of the three types:The common:standard rice30%,maize(yellow)64%,glutious rice0.5%,wheat standard powder2%,oats powder0.5%,sorghum powderl%,soybean powder2%;②he adolescent: standard rice24.5211%,maize(yellow)60%,glutious rice 1%,wheat standard powder3%,oats powder2.479%,sorghum powder4%,soybean powder5%;③The high food fibrin and calcium: standard rice28.2321%,maize(yellow)60.7679%,glutious rice0.5%,wheat standard powder0.5%,oats powder1%,sorghum powder1%,soybean powder3%,bran5%.(2) Considering synthetically of the《Hygienic standard for the use of nutritional fortification substances in foods》(GB14880-94),《Hygienic Standards for Uses of Food Additives)) (GB2760-2007), Chinese Dietary Reference Intakes(Chinese DRIs),blending ratio with the standard rice and processing loss, we definite the adding capacities of the various kinds of nutrition simples on the experiment raw material:①The common:The adding capacities per hundred gram of the VB1, VB2, VB6, VB12, Vc, VD3, CaCO3, FeSO4 and ZnO separately are 1.75mg,1.75mg, 2.5mg, lμg,75mg,7.5μg,2100 mg,45.59 mg,14.34 mg;②The adolescent:The adding capacities per hundred gram of the VB1, VB2, VB6, VBi2, Vc, VD3, CaCO3, FeSO4 and ZnO separately are 1.75mg,1.75mg,2.5mg, lμg,75mg,7.5μg,2200 mg,65.1 mg,19.33 mg;③The high food fibrin and calcium:The adding capacities per hundred gram of the VB1,VB2, VB6, VB12, Vc, VD3, CaCO3, FeSO4and ZnO separately are 1.75mg,1.75mg,2.5mg, 1μg,75mg,7.5μg,2400mg, 45.59 mg,14.34 mg.2. Setting up the sensory evaluation system of the cooking edible quality of the cereal rice-typed dietary supplements of rice and determining the nutrition componentsThe nutrition components of the cereal rice-typed dietary supplements of rice are determined and the loss state are defined, which supply theory basis to the final fortification capacity of the cereal rice-typed dietary supplements of rice and to compounding ratio (fortification degree) between the cereal rice-typed dietary supplements of rice and the common rice. At the same time, the optimal compounding ratio between the cereal rice-typed dietary supplements of rice and the common rice is 1:4 or 1:5.By means of study on changing condition of the nutrition components(VC, VB1, VB2, VB6, Ca, Fe, Zn, water content acid value) of the three cereal rice-typed dietary supplements of rice which kept in storage in three different packages and three different temperatures,we reached the changing regularity and the final loss ratio of the nutrition components in different storage conditions. It could supply theory basis for the industrialization production and science prescription of the three cereal rice-typed dietary supplements of rice.Different nutrition component adapts to different storage way, in order to gain the biggest preservation ratio of certain nutrition component, we must supply the optimal storage condition, namely optimal package way and temperature. But in practical production, it is impossible that one storage condition adapts to the all nutrition component. Therefore, actually, we can select one nutrition component as the main one and make its preservation ratio biggest, the other one is given attention to two or more things.3. The innovations of this paper as following:(1)The cereal rice-typed dietary supplements have been manufactured using the cereal as the carrier of nutrients the first time,thus the fortifying way in the past of the rice was been changed.(2)The quality and storage stability of the cereal rice-typed dietary supplements are studied the first time. |
