Ethylmaltol is an important fine food additive which is widely used as ingredient in food, cigarettes, drug, beverages and cosmetics. In recent years, ethylmaltol was mainly synthesized from furfural or furfural alcohol. The chlorine was used as oxidant in the furfuryl process, which csused environmental pollution and corrosion to equipment. This synthesis process did not meet the requirements of sustainable development.Synthesis of ethylmaltol utilizing TS-1 is one of important green synthesis routes, which are easy to control, mild, low-energy, clean, little byproduct and environment-friendly technology to the chemical industry. TS-1 has great prospects as the environment-friendly catalyst which has been becoming the focus in the green chemistry synthesis field.In this paper, we have not only introduced the synthesis process and development of ethylmaltol also introduced the application and development of TS-1. synthesis process of ethylmaltol was studied by catalytic oxidation, glycosidation, oxidation and aqueous hydrolysis. The factors affecting on the yield of ethylmaltol are discussed, including solvent, reaction temperature, reaction time, glycosidation conditions and its pH. The optimum reaction conditions were acetone as solvent, oxidation temperature of 40℃, oxidation time of 12h, glycosidation temperature of 75℃, glycosidation of 1h, oxidation of 3h, hydrolyze time of 3h, hydrolyze temperature of 100℃. The visible spectrophotometric method was used for quantitative determination of ethylmaltol, the yield was 57.4%.
