Abstract/Summary:
Arachidonic acid is an important synthesis precursors of human prostaglandin ,which has a wide range of biological activities and important role of nutrition and health care. However, ARA molecule contains four unsaturated double-bonds, so ARA can easily be oxidative degradation because it contacts with the outside air oxygen, even loss of physiological function. This study is to solve the ARA in some of the problems the food industry.Through the use of microencapsula- tion technology,it prolonged shelf life which easily to save and transport through which made into solid granular powder . Microencapsulation by spray drying is the most common and economical way to expand the scope of application of ARA.Through research, this study reached the following conclusions:1 An emulsion formulation through testing to finalize the wall material selected octenyl succinate starch and maltodextrin mixtures. The emulsification process conditions of emulsion ARA microcapsules: HI-CAP 100 and maltodextrin ratio is 1.5:1, heartwood ratio is 1:1.5 with the wall material, emulsion concentration is 40% (W / V).2 Determining process parameters of the spray drying: solid content is 40%, homogeneous pressure is 40 Mpa, inlet temperature is 190℃and 45% loading in the ARA , the microencapsula- tion efficiency of products more than 95% under these conditions.3 The charaeters of microcapsuled ARA prepared by spray drying technic was valued. The preparationp of ARA showed milkness in colour,and the content of moisture ,the density,surface oil content, the total oil conten i s about 2.08% ,0.35g/mL, 2.52%, 40%, respectively .and which is dissolved in good condition. The product of good morphology and size uniformity on the spray drying products with a scanning electron microscope.4 Through the deployment of oil to determine soybean oil: sunflower oil: palm oil: microencapsulation ARA = 50:50:12:16, by unsaturated fatty acid content of 59.65% of total fatty acids, saturated fatty acids accounted for 40.35%.
