With the production of Coprinus comatus increases year by year, focusing on the study on hot air drying characteristics of Coprinus and storage conditions (moisture). It makes great sense in the process and storage of Coprinus comatus.By drying Coprinus comatus under conditions of different hot air drying kinetics experiment, we get the drying curve and drying rate curves of Coprinus, analyze four factors (the initial temperature, wind speed, rise temperature method, and the final temperature) on Coprinus hot-air drying Speed and quality of dry goods. Compareing the experimental data of Coprinus hot air drying and three commonly used thin-layer mathematical models, and determine the parameters, and finally establish that the suitable mathematical model for air drying for Coprinus is Page equation. Drying in different conditions comatus dried quality score, unit energy consumption, rehydration ratio of polynomial fitting the experimental data were obtained for the appearance of dried Coprinus comatus quality, energy consumption and water recovery than the mathematical model. By different temperature conditions, the moisture absorption tests carried out. Coprinus obtained with increasing temperature, moisture absorption isotherm Coprinus move right; at the same temperature as the air relative humidity increased greatly and dry goods equilibrium moisture content increased, but relative humidity is 60% or less, the equilibrium moisture content increased more slowly, when the air relative humidity more than 60%, as long as relative humidity increased slightly, Coprinus equilibrium moisture content of dry goods will increase significantly. Therefore, the storage condition of Coprinus comatus should be in low temperature and humidity: temperature is lower than 20-25℃, humidity below 50%.
