| In this paper, the comprehensive utilization of peanut beggin with peeling peanut, which is used to extracte for fat with cold-oil-processing,and then crused and sifted for getting the peanut protein powder. The peanut protein powder is mo-dulated with adding accessories (soy flow,salt,ect) and structure reorganizated to reorganized peanut protein,forthemore,used to produce high-protein peanut fans with adding corn starch and extrusion forming.Cold oil extraction technology is the machine through the cold pressing pressure and compression ratio, the ratio of peanut powder, adjust pressing structural properties of materials, virgin material response frequency to determine the more suitable parameters. And peanut oil quality testing done, the basic line of edible oil standard.Process parameters and the structure of confrontation peanut fan parameters to identify the optimal conditions to study parameters:the compression of melting temperature at around 180℃, feed moisture content of 30～40%, the proportion of 1:1, Feeding speed 0.3kg/min, salt content of 1～2%, the level of peanut protein structure is better, the product presents a good appearance, fibrosis, the color and physical properties of the product structure compact, good taste, fragrant; ratio of peanut flour peanut fans:corn starch ratio of 1:4 to arrive at the best peanut fans; In addition, the test for the products, to observe the texture of its effect.Peanut red skin huller which was peeled is comprehensive utilization for resveratrol extraction as raw material. Only a trace of resveratrol in heller,about 2.04percent is extracted with chloroform method,in the organic solvent method with ultrasonic,which can't be used for industrial producing.
